A cellar tour and tasting at Zymé in Valpolicella Classico (Valpolicella Classico) : Made primarily (60%) from Rondinella grapes that mutated to white in Celestino Gaspari's vineyard. Celestino registered the grape as a mutation, and I believe he is still the only person making wines from "Rondinella biano." The aromas are fresh and clean, with a very pretty, expressive, floral approach. Palate entry is soft, pretty and smooth on the tongue, with elegant texture and moderate acidity. I got 6 bottles of this wine. The first disappointed a little......probably because I did not let the bottles settle down long enough from shipping movements. The remaining bottles have all been very good. They have a different taste profile that I find it difficult to articulate. I like different.

Rondinella bianco - a mutated rondinella that this producer discovered, and then cultivated. Very cool. So, this wine smells like a stereotypical NZ Sauvignon Blanc (grapefruit juice...) but tastes like something completely different. The palate brings white peach, melon, yellow apple, pear, fresh tarragon and other fresh herbs. Medium + body, great acid. A rounded and balanced wine. Excellent pairing with cold sour cherry soup.

I was a little disappointed in my first bottle of this wine from a few months back. This one was in line with what I had anticipated. I might have opened the prior bottle too soon after shipping......and it needed to settle down. It is a fresh wine with offsetting notes of sweetness and citric. Also, a good summer wine.
