Hakkaisan Junmai Daiginjo

L - clear, water like S - sweet mochi, melon, apple T - follows the nose - sweet mochi up front and throughout intermixed with melon and apple F - light to medium bodied. Soft, yet crisp O - a great, clean tasting Junmai Daiginjo. Not exciting by any means, but well done nonetheless.

Clear color with medium waxiness. The nose consists of coconut water, mangosteen, cucumber core and confectionery mochi. The mouth confirms the nose, transitioning from quenching juiciness of coconut water to pleasantly subtle bitter sweetness like melon, backed up by moderate warm richness. All is about purity and delicate texture. As typical of Hakkaisan, conveying directly the quality of soft water from the snowy mountain. 90-91. From the batch of March 2024. Blend: Yamadanishiki, Gohyakumangoku, and Miyamanishiki.
