This was first taste of an aged sparkler, so I didn't really know what to expect. The bottle was definitely not bad, but I don't think it is my style. It had a nice apricot and honey color and flavor profile, with plenty of acidity left, but there was a hint of something that just didn't sit right on my palate. Maybe it was the taste of aged yeast? Toast, apricot, butterscotch, good acidity, pleasant finish unlike some that finish like beer. Actually not a bad sparkling at all. Nice color of light amber. Relatively full mouth feel. Nice aged sparkling.
