Ideal time to enjoy full complexity here. If you like a sense of age and honeyed notes on the acidic fruit of a Chablis, this is a good time. Needed ten minutes in the glass to work its magic. Difficult vintage for Chablis growers, so let us enjoy them at their peak.

With Moules marinières. Grey pear, carambola, white and yellow flowers, almond, resin, lime with a wiff of gun powder and salinity. Excellent match. Last bottle, should try to find more. Clearly a bit more complex than the generic Chablis and worth it.

Admittedly this 2016 but this shows a lot of the sweet-tart character of the vintage. Could use some concentration at its core. Pretty good but I can’t say I’d buy again.

The Morris (Potrero Hill, San Francisco) : Nose: A shaded forest floor with damp earth, wet clay smeared on top of some dried stones, and yellow apples that has softly ripened. Palate: Clean acidity with solid energy, carrying fresh and lightly ripe stone fruits with a nice bitter minerality from the pits of the stone fruits. Dried, brittle hay lingers into the finish with a small grasp of fruit still. Still tasty but I would've liked to have tried this …

No decant, with Moule frites. Great match! Complexity , high acidity makes it fresh. Long and goes on for 20+ sec. Apples and salmiak, salinity and graphite

Moreau Naudet Chablis Horizontal and Chablis themed Blind Tasting (Bin 75 Alpharetta, GA) : Deepest yellow color; bruised pear and golden apple, natty, so much of a Savennieres Chenin quality, apple, intense, fine mineral, late sizzle, honeyed fruit and texture; probably a wine that would resurrect but I'm lacking some fortitude and time to follow it.

Great balance of mineralogy and salinity. Undertone of citrus/acidity with nice richness. Wish I had more! Drinking well now but still plenty of life. Even better after 30 minutes in the glass.

Pico usually harvests late, and does not add sulfites at pressing, and barely uses sulfites at bottling. The result is a wine of excellent terroir expression, mixing maritime oyster shell influence, poached pear, with good phenolic ripeness, and ending in a chalky oyster shell infused finish with good lenght. This is a food wine, it is not self sufficient, it needs seafood.Would pair well with oysters, salmon roe, shellfish, wakame salad and the likes.

Different from the last bottle. Odd, lanolin flavored. Maybe heat damaged

Travels in Burgundy... A Few Wines During Meals; 11/7/2021-11/12/2021 (Burgundy) : Starts out nicely rich with a moderate degree of ripeness, but the sheer concentration is the star here. I also appreciate the saline, minerally finish that is classically Chablis. Very good now.

First time with this producer and I liked it a lot - especially for the vintage. Nose of freshly baked bread, touch of wood and citrus, fairly unctuous texture making for a full weight white Burg (rather than a zippy chalky typical Chablis). Ambitious and serious and showing that there is a lot going on in Chablis and one should probably catch up on those latest developments as a Burg lover as it seems to offer some relative value.

This is a fantastic rendition of Butteaux by the very talented Thomas Pico. Took a bit of time to open (2 glasses from the bottle on day one where good but not Great, the rest of the bottle on day 2 was stupendous). Frankly think that Thomas makes the best wines in Chablis today, including the big 2. The texture is fabulous and attests to the quality of the viticulture. Long, saline and chalky. Everything I love about Chablis.

Terrific Butteaux Chablis, lovely floral, intense and distinct nose, good body and structure throughout, fresh and crips. Highly recommended at this point in time.

Thomas Picos 2016 Domaine Pattes Loup Chablis 1er Cru Butteaux from the small village of Courgis is something very special. Biodynamic. Manual harvesting. Nothing added, nothing removed. Only natural yeast. Stored in old French oak barrels for about 24 months and bottled completely without clarification or filtration. We best describe the fruit as apple pie and it takes a good while before the natural wine musty aroma is toned down. Relatively oily character, hearty but nicely integrated acids and an …

This Chablis is too polished for me, I miss crispyness and fresh attack, more like a Côtes de Beaune, eg. Chassagne-Montrachet.

2005 Burgundy blinds on Jason's roof : Served blind. The acidity here is absolutely bracing, which made the call tough. Clearly Burgundy, but I though it was 2014 Puligny given the acid levels. Pretty shocked it's a 2016 Chablis given the acidity here, but I think I was more impressed by it than enjoyed it.

They are holding this one longer and longer in tank. I think that may have been a commercial reason at the start to balance some of the vintages. But maybe not, seems to be a clear belief in holding this one a long time for winemaking reasons. Certainly great depth on the nose. Developed stone and sea brine with tea and honey. Palate is light and lilthe. Very long finish. Some tasters found it a bit tired or at least …
