Corollary Cuvée One Rosé

Not the best Corollary in my opinion, but clearly the crowd favorite at thanksgiving.

Seafair at Lee and Mia's (Mt. Baker, Seattle, WA) : When we first opened this it was a bit too warm, and the first impressions were that this rose from Oregon felt almost European in style. It was tart, with some fruit and greenness. The lack of / very low % of malo was obvious. With thanksgiving dinner. Worked well with pretty much every dish. Was not heavy but complimented and enhanced the dishes while also recanting the mouth. What more can you ask for.

Tasting at the winery. Tart. Structure. Some saline. Nice structure. A little light. But yum

Visit at Corollary (Corollary Wines, Amity OR) : The nose is fresh and balance with tones of orange blossoms, creamed peaches, raspberries, pears, red apples, chamomile, toast, and cinnamon spices. There is good complexity, but this lacks somewhat in the depth category. The Medium bodied feel is balanced and fresh with tart, high acidity. This is a fun and fresh Rose bubbles, but it does lack a bit of depth across the nose and palate that would ratchet this up …

Pale pink rose color. Citrus, candied orange, tangerine peel, ginger, ginseng, hazelnut, dried herbs, and minerality. Medium bodied, high acidity, medium structure, medium alcohol, and long finish. Complex, layered, and well-balanced. Very good mouth feel. Excellent sparkling rose from Oregon.
