Nice mid career Shiraz, starts mellow then transitions to something more interesting as it takes on air: black and bramble berry compote, tar, pepper, tobacco leaf. Mild level of tannin left, med pku weight, med plus length. Nice QPR.

A classic Barossa shiraz. Given my cellaring condition, it held up very well. Rich, dark cherry and blueberries; hints of spice, and powdery tannin. At this age, decant for a couple of hours is a must.

I know everyone was drinking this in 2014 but I stumbled on this bottle in the cellar and James Halliday was definitely right - this wine still has a couple of years left. A classic Barossa red, berry smells and tannins which have become refined over ten years. Shame this is my last bottle.

Steak and chips. Smoothing out a lot, and still banging out some strong flavours. Little bit too alcoholic, but very good value for £12ish

Bold, rich & full bodied. Nearing the end of its life, but still very well structured & with plenty of fruit.

Big but balanced. This is obviously Barossa shiraz but that's ok when you're in the mood for it and this is done well. Drank beautifully with some rare roast beef.

Big, bold and in your face with plenty of fruit and even more alcohol on both nose and palate. Full bodied palate with loads of black currants, black cherries, oak and pepper. Alcohol (14.5%) very noticeable. Screams out for rare - medium rare steaks. Nothing subtle about this wine, which is a huge contrast to the St Joseph syrah it was paired with.

Deep purple color and strong aromas of dark dried fruit and black currant. The depth and concentration was impressive, although this wine lacked in complexity. The finish was moderately long but lacked complexity. Fullier bodied, drier, and more intense than the 2007 Faith drank on the same night - very much worth the extra $20.

Meat and game on the nose, with liquorice, chocolate and integrated oak. Palate has developed secondary characters but is still fresh and vibrant. There is complexity and excellent balance here. Drinking near its peak.

Culina : Our Wines, Our Style (J.W.Mariott Hotel) : Alcohol : 14.5% Aged 20months in 1 & 2yrs old American's oak. Soft aromas of dark plums, dark cherry fruits. Full body round palate that show pepper, dusty tannins, with lots of sweet dark fruits and the lively acidity kick in at the back that well support the sweet fruits and keep the wine in precise with good freshness with long juicy finish. Very good. A well made wine though this …

CULINA "Our Wines, Our Style" (Grand Ballroom, Marriott, Singapore) : 100% Shiraz. Matured for 20 months in new, 1 & 2 year old American oak Nose: Compared to their Faith Shiraz, this had a deeper and more robust nose showing more aromatics such as herbs and an anise-y note Taste: The spice and black pepper really shows here, but not over the top. 14.5% alcohol is nicely balanced with their voluptuous fruit. A good show here. Should hold for at …

TWATS Typhoon (Kells Shelter) : twat disputes over the nose, sim - "i like", gus wanted to get carnal with it, is it yarra yering?, tight but fine tannins, worthy of a dirty little rendez-vous, perhaps on a boat?
