I Custodi Etna Bianco Ædes

Etna, baby. Zappy, fresh and a lot of depth that unravels in the glass. This carricante starts with a concentrated aroma of lemon citrus, apricot, apple, honey salt and mountain herbs. These characters follow through onto the racy palate with a prominent savoury edge (think mountain herbs with almonds) which it leans into more and more as the wine warms up. So much finesse as it travels along.

Tropical fruit, minerality, finish is long on acidity.

N: beeswax; pear. P: beeswax, pineapple, wet stone, hints of salt. B: medium; fairly clean middle with structured edges. A more musty, contemplative wine than I expected based on other reviews. Will pair well with firmer fish and richer flavors. Think swordfish and tropical fruit. Avoid garlic and earthy herbs.

Soft nose initially with some mineral notes and light acidity, but as it warms, opens up nicely, showing mixed white fruits. Between light and medium bodied and very clean upfront with melon apple and soft pear notes. Much more depth and nuance through the middle than the upfront fruit notes first suggest. A nose of apricot, peach and honesuckle, a little lanolin suggestion texture. Full and rich on the palate with salty minerality, long finish, viscious. Rather enjoyable.
