Purchased @ Simmonet-Febvre's Chablis tasting room. 70%Ch, 30% PN, 6g/L dosage, don't recall how long on lees. Website says 36 months, but there may be later disgorgements. Cork has a very short "stem" compared to Champagne corks. Short, fluffy very fleeting mousse. Tiny sparse bead. medium-light gold color. Nose has a hint of brioche yeastiness. On the palate, between a ripe apricot and yellow nectarine, sweet lemon and a slightly vanilla'd finish (but not cloying). Somehow keeps everything in balance. …
