Crisp & minerally with sweet, ripe green apple and lemon flavours smothered with butter. Bright with a decent core of acidity the finish was lingering and elegant. I’d recommend this is served well chilled as the dosage appeared to be on the generous side. That said, it outperformed many a rival from Champagne. CHP 92 pts

Walkabout tasting, no detailed notes. This was by far the best sparkler in the line up. Seriously good, with golden color showing some age, light bruised apples, cinnamon. Like a good Grower Champagne.

Simple sparkler with dough, minerals, lemon and mild spice. Shorter finish and a little sweet.

A friend brought this to dinner. I was impressed. Fresh but with a base of richer wine and lees below. Complex, fine bead and impressive. I know nothing about it but I would certainly drink this again.

**Sparkling Friday** (17/20) Beautiful style Cap Classique. Very mineral, lingering and complex. Blend of 60% Chardonnay and 40% Pinot Noir. Aged sur lattes on the bottle for 50 months. Disgorged in November '22. Medium+ intense aromas of white grapefruit, green apple, nectarine, tangerine, blossom, almond, vanilla, croissant dough, wet stone, sea salt. Dry wine, high acidity, light body, pronounced flavour intensity, creamy mousse, long finish. 12,5% ABV - 3,5 gr/l dosage - South-Africa tasting @ Wijnbar Pinot

Terroir-istes Local - Cap Classique 3 (Cape Town - Las Cases) : (Tasted Blind) Pale gold with fine bubbles. Delicate aromas of ripe Pink Lady apple and light white peach mix with fresh bread dough and flaky pastry, yet the autolytic character remains understated. A touch of strawberry and cream emerges with time in the glass. The palate is creamy and mousse-like, filling out the mouth and keeping it in check with sculpted mineral acidity. Been a fan of Graham Beck for some years but never tasted their top wine. Had high hopes, but was disappointed. At present, this doesn't really stand out compared to their other cheaper bottlings.
