Chablis with E&M (E & M's in the rocks, Sydney) : Slightly oxidised but honeyed, very honeyed in fact. Rich, buttery and toasty. On the palate it's juicy with green apple, custard, honey, toast, sweet spice. This is the best bottle of the three I picked up.

this is the remains of an earlier bottle and, though stored in the fridge and spritz, it's fallen apart. should have finished it earlier but managed to salvage it with a little truffled salami.

This bottle is in far better condition than the last one. Toffee apple made with a green apple and fried off in butter before being further coated in marzipan on the nose. Touch oxidised on the palate to go with the flavours of the nose. Quite linear and front to back of mouth. Rather splendid

Raid Len's Cellar #10 : Haven't had much luck with Defaix wines but this was very good. Honey, straw, lemon and toast. Nice rich fruit and a good amount of brightness across its length. In a good zone for drinking now.

Coravin fun - Token white and shiraz/syrah (My place, parramatta, sydney) : From Coravin. Aromas of honey, lemon, cream, marzipan, slight chemical, slightly maderised as well. In the mouth, it's quite tart with muted lemon and honey and quite searing on the back palate...and it all drops off quickly. I'd suggest that the wine is probably out of condition.

A mature golden yellow in colour, a nose of marzipan, butterscotch and honeyed lime and nectarine. Texturally this wine is flawless, the line of crystalline acidity gives freshness across the palate and informs the wines length. There is a touch of gun flint on the palate alongside grapefruit and lime with a savoury, oyster shell like complexity. An excellent example of aged Chablis.
