Although I've tasted Camille Thiriet's wines numerous times, this is the first bottle I have watched unfold over the course of an evening. This starts out with very bright and precocious black cherry and berry aromas and flavors that seemed fun, but simple. Obviously very young, this wine kept changing all night. While it didn't seem typically "Burgundy" to start (whatever that means), more brightness, minerality and textural charm started emerging in Hours 2 and 3, providing a good backbone …
