Drank this over a four hour period and it evolved nicely. Paired with a lamb roast, mashed white sweet potatoes, and roasted brussel sprouts and cranberries. 2000 wasn't a stellar year in Burgundy but this wine was delicious and a delight. A beautiful nose of red ripe fruit and earth that didn't quit the entire evening. The palate was a nice balance of fruit, barnyard, mineral, and acid with a lingering slight peppery finish.
