What a diva. It takes ages to open up – completely closed at first and only revealing itself slowly over several days. When it finally does, it’s fascinating yet fragile: just one degree too warm and the alcohol already feels less integrated. Glass: Riedel Superleggero Burgundy Popped and poured. Clear, medium ruby-garnet color. Very shy, tight and closed nose. Not very appealing. On the palate almost the same picture: Tight, lean, closed. Certainly with a great structure. After about 1+ h it opened up a tiny bit, but was far from being on par with Hubers Schlossberg we had before. IMO the bottle was not flawed. Too young? Maybe, but that would be surprising. 3 hrs slow ox. Very sad to learn this was my only btl of '12 Hundsruck. Should have opened a Centgrafenburg, sigh. On the nose: heavenly aromatics with wild strawberry, soft coconut cream, herbs, pomegranate molasses...somehow decadent and rich, but simultaneously restrained. On the palate: fantastic acidity, but dark and brooding with black cherry, strawberry, iodine and brine, almost dark seaweed with a lovely mineral turn.
