Deep strawberry-rose in color. Red fruits balanced by spice and mineral. Paired well with a Indian chicken dish. Well done!

Harvested on September 4 at 19.8 brix. Total acidity was good at 1.1. 16 hours of cold soak skin contact before a whole cluster pressing. Fermented completely dry. Aged for 5 months on French oak. Cold stabilized for clarity and then racked. 12.9% alcohol.
