Silvano Follador Valdobbiadene Prosecco Superiore Nature

For me, Prosecco has its limitations but this is a finer version than I have ever experienced. Reticent aromas of citrus and a bit of honey. Pure, clean, and bone dry on the palate (the latter characteristic being most welcome around here). This could be a standout with a plate of premium salumi which I, alas, lacked. Great cut and finesse.

Light yellow color with abundant, steady, tiny bubbles; savory, autolytic, chalk, almond nose; creamy texture, almond, pear, mineral palate with good balancing acidity and a note of white chocolate on the medium-plus finish (11.5% alcohol; composition sparkling wine cork) 90+ points
