Elementary Cellars Cabernet Sauvignon Volume I

Big and bold, but not overly fruit forward. In a very nice place and could go a bit longer.

Same as previous notes. Bold black and blue fruit with some licorice and mocha. Very smooth on the finish.

Light black fruit, but this is more an Old World wine that a New World fruit forward wine. Some spices and foliage sensations mid- to rear palate. Tannin is completely resolved. If you got 'em. drink 'em. I don't think this wine is falling over the cliff, but I don't thing that additional cellarage is going to yield commensurate benefit.

Decanted for 90 minutes, bold aromatics...floral, plum and black cherry. It was still a bit tight, but came into its own after 2 hours. Oaky with blueberry and cherry, layers of licorice and blackberry jam.

Decanted for an hour, and I cannot believe how delicious this wine is. Aromas of plum and oak, it reminds me of a Paul Hobbs Dr Crane I had recently, but for $60. Flavors of anise, mocha and black fruit persist through a smooth finish.

Popped and poured. Consumed over two days. The wine has evolved nicely from when we had our first bottle two years ago. More balanced now and not fruit forward.

Very murky maroon color. A bit of smoke on the nose (never noticed that in a CS before). Terrific entry to the mouth. There is a light hit of cassis, but not overwhelming. The murkiness in the color may have prejudiced me, but there is an unusual mouthfeel to this wine. It seems “thicker” than most. The tannin is really not that “in your face,” here, but I’m wondering if that is affecting me regarding the mouthfeel.

Opened and poured a small glass for a taste, then decanted the rest. Consumed most over the next couple of hours saving a glass for the next day. Palate was fruit forward but not overly so. Good dark fruits. Nice finish. Tannins still a little big, but not overwhelming. Alcohol was not noticeable on the first day but it came out on the second day. A good wine.

First look at a new wine. A California negotiant Cabernet from Robin Akhurst and Brian Schmaltz. Volume 1 comes from Oakville and that's all I knew coming in. Cool label and the bottle shape is unique. Very appeling visual package. The wax capsule was nearly rock hard and took some elbow grease to cut through. Decanted in the AM, rebottled in the evening and brought to dinner at Walter Hansel Bistro. Had approx 15 hrs of air. Nose was black …
