Opened 2 hours in advance. Dull yellow with green tint. Oh, what a nose-musky, herbal, iodine and so uniquely Chablisien. Medium weight, calm and dry. Saline at its core with lemon arriving later to fill out the mid-palate. Excellent but not severe acidity, stoniness, and a finale of persistent, tongue coating soil. White wine does not get any more intricate or complex than this. I have had mixed experiences with 2012 Chablis, but this was in full bloom and at …

Still very fresh with not a hint of premox on it. Classic seashell, salt, and citrus layered on top of substrate of white fruit and chalk. Nice density on the midpalate, but light-on-its-feet, with good acidic tension and a nice, long, linear finish (though with more breadth than I normally associate with Dauvissat). Killer bottle.

Some medium golden color, lovely light sea spray and crushed fruit nose, medium depth, saline mineral bite, sea, tide pool, slight mouthwatering tartness, steely mineral, long oyster shell finish. A fabulous bottle.

A bottle that is in harmony. Pear gives way to a strong mineral structure that runs through the spine of this wine.

Surprisingly youthful. Sharp, minerally with only the slightest touch of hazelnut.

Grand Cru Birthday (Chicago, IL) : Weird bottle that is not corked or oxidized but completely dumb and providing little pleasure. Something off here.

Two hour decant. Dauvissat perfection. 2012 Preuses is in an amazing spot, riveting, chiseled, textural and pure with classic Chablisen oyster shell minerality in a tidal wave of spiced orchard fruit, lilies and the slightest nutty edge. It’s incredibly silky on the palate showing killer density without weight. Lasers of racy citrusy acids and a long saline finish round it out. Fabulous showing.

Summer Omakase Night at Mori NYC (Mori NYC) : Opening of pineapple, citrus, and an “edge” that neither of the Raveneau bottles had. A stony minerality to it, along with salinity — nearly a sweat, of sorts. A thick, humid ocean breeze and oyster shells, but not outrightly so. Understated, nuanced, and well-situated for any omakase paring. We were annoyed at ourselves for not popping & pouring an hour or two prior. It would have played complementarily with the otoro …

Don & The Shrimpheads (Craig & Nita's Place) : Light gold color. Drank a glass over an hour plus in mini vertical of '05, '10, and '12. Also delicious, with a more tropical bend, is the flamboyant 2012. More juicy on the palate, with Mandarin orange out front, nectarine, and a hint of tropical fruit followed by some mouthwatering tropical fruits, pretty mineral notes. This is rounder, but still showing plenty of acidity, and it's very classy. 94+ to maybe …

Local Minneapolis Chef extraordinaire Don Saunders cooked for 8 Shrimpheads at my place. We highly recommend hiring Don to cook for in home events! David's btl. Paired with our halibut course & flighted w/ Siggy's '10. This was more ready out of the gates then the wonderful '10 which I give a slight edge to for overall power & intensity. But the 12 was sublime too. This too improved with time in the glass and went wonderfully with the Halibut.

Golden straw in color and showing a bit advanced with lots of honeyed florals. Bottle in 2018 was too young; five years was too long to wait to check back in although this is still completely drinkable.

Acker JK 51st birthday in NYC. Discreet nose with iodine notes, a little reduced. The attack is wonderfully precise in a Jedi laser cut manner, the wine in the mouth is altogether deep and intense, while retaining its supreme balance and elegance, delivering citrus, pomegranate, and white orchard fruits flavors framed by juicy acids that culminate in a quite intense, long and chalky finish. Impressive and at Gd Cru level without a doubt.

Mineral driven nose with notes of lemon, apple, and smoke. High acidity with more minerals on the palate. Long finish and great complexity. Really good right now and drinking much better than a few years ago.

Mildly disappointing - have recently enjoyed some superb Dauvissat wines, but this wasn't as enjoyable or impressive as e.g. the Forest of the same vintage, let alone the Clos 2007 I had last year. Felt ready, perhaps even slightly past peak, with green herbs and sassafrass (and no reduction) on the nose and a rounded, richly textured palate that had a good depth of grassy, citrusy flavour but no zinging acidity. Finish was fine, if not as long as I'd …

Dauvissat plus X Tasting (Freiheit Vinothek, Ulm, Germany) : *** all wines tasted blind *** Glass: Zalto Bordeaux Clear, medium golden color. Very reductive, flinty nose with fine oak. On the palate very elegant and precise. Even better texture and structure than the Raveneau Foret. Very deep and dense. Still young and with a bright, shiny future ahead. 92-93+

Tasted blind at dinner out: the second Chablis to shit the bed this session; while it should have showed some brisk sea air, instead we were hit with foul smelling, dead fish , swampy water smells. Bottle was somehow infected with something, a real disappointment amplified once we learned what it was. Ouch.

Same btl as rocknroller. Served on the occasion of Kevin's (rocknroller) 60th celebrated at Minikahda Club with 12 of us enjoying Vincent's outstanding food & Nico's depth hand with the wines we brought along. 110pt occasion! This shared a terrific 2 btl flt that also included killer 13 Fevre Les Clos. Classic Dauvissat elegance extraordinaire, where even the tiniest ruff edge magically disappear. Vincent would have made a great luthier! As Kevin noted once the reduction clears the nose rebounds …

It's the Big LX Birthday Bash: No Holds Barred (Minikahda Club, Mpls) : Light medium gold color. PNP, drank a glass over an hour plus. Markedly reductive from the start, take alanr's advice and give this a healthy decant and be rewarded for you efforts. The sulfur blows off steadily and leaves you with a wonderfully swampy nose of ocean aromas, crushed sea shells, wet cement, fennel and lemon pulp. The palate is dense and filled with saline, pulpy lemon, …

No premox, but no wow. Could be an off bottle as it has been in the fridge unopened for a couple of weeks. Lean, and lacked any particular nuance, some nice slightly lemon oil notes.
