Oh my this was delicious, mature 1er Chablis heaven. Absolutely rocking, with some tertiary notes to round out the solid profile. Just wonderful.

Gotta love Diam closures. This is maturing nicely without falling flat on its arse. Bright fresh mineral notes but there is an undertow of maturity now that rounds this out much more - notes of green apple, then a touch of baked-apple on the finish. Umami notes (very delicate) on the finish. Years ahead.

Note: I use the recommended scale, so 85 represents a very good wine. Very good Chablis. Opened up a bit through the bottle. It had a bit of richness, which I prefer. See no need to wait any longer.

Pours somewhat golden and definitely shows an aged quality from the get-go. Needed some air (1 hr) to crisp up a bit with the acidity lifting the stewed lemony and floral flavors. Definitely at the drink up point, but a nice wine.

Medium pale yellow. Slightly reductive. Notes of flint, seashells, roasted almond and lily of the valley. The fruit is more tropical, guava and pineapple. But, very zippy acidity washes away any doubts. Grapefruit and spice note lingers. Creamy texture. Strongly saline. With tropical fruit, this may not be a typical chiseled Chablis. Regardless, this is still a very good Chablis with deep vibrant lemon layers and unmistakable minerality. Very expressive.

This exceeded expectations. Delicious, so enticing and alive but the bottle age means it doesn't have the striking acidity I often have from younger Chablis. I looked this up, assuming I paid a lot for it but originally paid about $38 - it drinks more like a $80 bottle. Really beautiful.

My last bottle of this fantastic wine. LIght straw yellow, still young in its appearance. Intense nose dominated by lime, green apples, pears, chalk, oysters, and a hint of vanilla (probably from oak). Full bodied, almost fat feeling in the mouth. Then the acidity kicks in, proving that this is Chablis and not a Central Burgundy wine. Very fresh, no sign of premox here; this is my second to last bottle. Perhaps I could have left them longer. Very pale gold colour. Initially tight nose of limes but hints of more to come, still very cold straight from the fridge. Evolves very nicely, nice tight stony line, with a touch of pineapple and a v discreet touch of toast too. Really excellent on the palate, lots of energy, a great line of acidity, very long. Perfect Chablis.

I have to say that what Droin is doing is just magnificent. The wines may not be as pure as the Dauvissats and Fevres or as powerful as the Ravenous, but they balance power with a clear sense of place like no one else. This is a perfect example. Lots of lemon and lemon peel start-to-finish with some ripe apple. While this is unusually large scaled and big for Chablis, it is also classic with so much mineral and crunchy textures. I liked this a lot when popped-and-poured (92-93 points), but it got rather tired after open only an hour.

A rather hefty style for Chablis, but still typical. Intense aromas of citrus - lime and lemon zest - as well as hints of wet earth and seaweed. Full bodied, almost chewy, concentrated, and with a long aftertaste dominated by ripe lemon. Lacks some complexity and elegance, but seems still very young. I think I will save my other bottles a couple of years and try again. This wine is not going to die tomorrow.

Zingy, with high acidity that keeps the fruit at bay for now. I'd say that this is still too young and that the wine needs to shed some of that leanness before this rounds out a touch. The acidity does get somewhat in the way for now, although time will be kind to this wine. Surely one of the best producers in Chablis right now.

Now THIS is a wine chiselled from rock and sprinkled with sherbert. Ultra-lean with the acidity dancing on the tongue - it almost crackles and sparks - super fresh but super balance. Needs some more time to round out a touch but impressive. Not for lovers of flabby oak bombs that is for sure.

Purchased on pre-sale from the Chicago Wine Company, shipped in spring 2013 and held in a temperature controlled wine cellar.
