Aerated 1 hr. A nice cab with balanced dark fruit, notes of cherry, ripe plum, cedar with well integrated soft tannins. Paired with grilled whiskey pork chops topped with molasses butter.

Green pepper, black fruit, chunky tannin and slightly blocky structure. Overall has aged very well and give some nice earth driven fruit and garden vegetable notes. Just lacking some refinement. A solid aged Fisher cab.

Rich red color - deep burgundy with a touch of brown, depicting its age. A fruity deep plum California Cabernet Sauvignon nose. Big taste of brighter fruit, smooth and well balanced, with a hint of black licorice.

with 7% PV and 3% CF. Medium plus nose is gorgeous, has that aged Bordeaux like feel of sandalwood, cedar, dessicated black fruit, old roses, sweet earth. Palate is smooth, lighter than expected, fruit up front and then finish shows lovely aged complexities, musty feel, beautiful style. Still showing structure with medium plus tannins, lovely finish. Highly recommend.

Last one of these I had was back in the 90's vintages , this was fresher , more modern , took 3 +hours to open to the point of quality that I was expecting. Drank balance of the bottle the next night , not as good at that point.

Drank from a Mago and needed at least a 45 min decant. The wine had some great fruit left however it seem to fade as the evening wore on. Paired with grilled rack of lamb. Drink up in 2020 no later in my opinion. Cheers

BBQ at The Papies (The Papies, Elizabeth St, London) : Opened and served albeit is a wine that we would definitely have decanted under normal circumstances. Makes no apologies about being a Cali Cab, from the ripeness of fruit to the power presence on the palate. But this is no Cali Cab monster and definitely the age in bottle ( Another proof that we drink Cali Cabs too early) helped this wine develop an elegant side and drinks very well …

This wine is done. No character, no fruit, no finish. Tastes like a smooth value wine.

This wine has changed dramatically since our last taste in 2011 and sadly this is our last bottle! It must have peaked because this is a beautiful California cabernet. No flaws. No sediment. Dark garnet color. Beautiful dark floral and fruit nose. Full of flavor. Low tannin. Low acid. Medium alcohol and a medium finish. Paired perfectly with barbecue ribs. Drink up!

Deep garnet in color with bricking edge. An austere nose of stewed tomatoes and tobacco. Tastes of strawberries, cigar box, leather and earth. Light on fruit, but still considerable tannic grip. Past its prime, but still enjoyable.

Friday Night Double Blind Tasting $40+ (Bin 75) : Dark core, opaque, light garnet rim; vanilla, plum, blackberry, green pepper, cocoa, slightly grapey on the nose; rich palate, sharp finish, blackberry, sweet wood, vanilla, clove, green pepper, cedar; ok, probably needs more time to come together.

Very much like a Pauillac. Youthful in appearance and taste. Dark fruit, cedar and band aid, and a finish that doesn't quit. I wish the alcohol was a little lower as it stood out, but other than that, it was delicious.

Decanted for 3 hours...needed to aerate afterwards as it was young and tight. Awesome wine.

Aged meat and Aged Cabs (Mister Fister's, Chicago IL) : Nose: Very well balanced and aromatic nose with tones of black currants, dark red cherries, licorice, vanilla beans, spice tones, and some perfume tones. There is nice depth with a plushness to the tones. Taste: Full bodied with medium acidity and youthful tannins. The tannins aren't overpowering, but provide good support to the tones of black currants, dark red cherries, licorice, vanilla beans, and spice tones. Overall: This is a …

great stuff! Last bottle. One of the most Bordeaux like California wines I have ever had. Great fruit once the wine opened. Dusty, spicy earthy quality on the sides. I would think this i s the prime for fruit and structure from this wine.

I must admit that the wine has a very distinctive Bordeaux nose. There was just a touch of horse- which blew off right away- and a strong cedar/juniper smell, nice soil tone, and even some minerality. I have now had around six of these, and prior to this the wines have been so severely tannic that I had a hard time getting them down. The tannins have definitely eased, but the wine has maybe begun to dry a little. There …

Lovely nose of blackberry, chocolate, chalky limestone and white pepper. Still quite young and primary on the palate with a smooth and opulent chocolate black fruited attack. Did have just a tinge of bitter tannins on the finish, but those should resolve themeselves with a little more bottle time.

aromatically - anise, charred cedar, and a touch of black cherry. On the palate medium density elegance and a medium plus intensity of acid with very fine gran tannin. Not showing nearly as well as the previous bottle. I have experienced some bottle variation with this wine. $150/bottle

This was a wonderful bottle. Very Bordeaux like with tobacco and earth flavors but has nice additional flavors of very dark fruits and chocolate. My guess is this wine has a nice life ahead of it.

Aromatically - Reminiscent of a walk through a extravagant garden filled with diffferent flowers on a spring day, A blast of delicate red roses, iris, a hint of light tobacco and dry hay and just a touch of cherry. Fantastic earthy, tobacco flavors on the palate with rosebud and cherry flavors. A relatively low acid wine with medium plus density. All around very well stated, a very elagant and powerfull cabernet.

Opened, poured, decanted rest. Smelled of earth, tobacco leaves, and dark fruit. Opened up as the evening wore on (couple hours). Color was dark, slightly purple, right up to the edges. Tasted of blackberries, herbs, and earth. Lots of structure still.

Blackberry, cassis, plum, lots of wood tannin, a bit much. Caramel, toffee starting to show. Slight herbaciousness. Med + alcohol. Drink now, don't think it's going to get better.

A classic french style. Smokey creosote, with complex black fruit in the background. Just starting to come into a drinking window. After one hour of decanting, thin on the mid palate, but subsequently rounded out. Drank it with rack of Elk. Wonderful wine food pairing.
