Not at all what I was expecting. Deep golden color. Candied nuts, cooked apple, cinnamon bun, brioche. Mousse felt a little tired. Quite oxidative. Maybe this was sitting on a shelf at the store for a while--the bottle does not seem to indicate when it was disgorged or bottled. In any case it was surprisingly complex and enjoyable! Good pair for thai steak salad.

I’ve not had much champagne at this point, but I did find this one very enjoyable. I did notice the bubbles dissipating considerably as I sipped the glass. Crisp, then creamy (my favorite), then basically still. This occurred over maybe 20 minutes.

I found the champagne to be sweet-ish, presumably due to a generous very generous dosage (9 g/l? feels higher). As a result this champagne is broad and flabby, and it lacks in tension and freshness.
