Once again at Zuma, London and this time it was a masterclass of what umami is. We guess this bottle has aged a bit and had that older, aged sake feel across. A times one dimensional but we liked it more the first time a few years ago. Tech Specs on earlier note.

A very unique type of sake and a new style of production in a way of a combination of raw sake with fast brewing. A bit vinous in a way as it does have an underlying sweetness but also bight and with proper acidity. Rich for sure and full of a text book umami feel. Very good with food.
