shared with pat at selkirk manor. celebrating the end of another week of SIP (shelter in place/sip in place) due to covid-19. this is the last of three bottles. reviewing previous notes, i have not been thrilled with this wine. i suspect that this wine was intended to be consumed earlier. no formal notes this time around. i will say that the wine never has and still does not show the crisp freshness that i associate with saint-aubin. i suppose …

Decanted for almost 2h. Lovely elegant aromas of mild light caramel on baked apples with hints of minerals and herbs. Tart apples on palate w some minerals, herbs, and a hint of light caramel. Excellent acids and medium bodied. Beginning to attain secondary characteristics. Wish I had more to follow it's evolution. But drinking well now.

Shared with pat at Selkirk Manor to celebrate the end if the work week. last tasted 1/2017. pulled another bottle hoping for the best even though my last note said drink up. I had continued to neglect this wine waiting for more feedback from others which was never received. the wine has continued to decline and now shows some oxidative characteristics. past peak and certainly not typical of what young and fresh St. Aubin tastes like. color has gotten more …

Shared with pat at Selkirk Manor to celebrate the end if the work week. I neglected this wine waiting for more feedback from others. Decided to open due to lack of recent postings. Probably past peak and certainly not typical of what young and fresh St. Aubin tastes like. Nevertheless, an interesting wine. Golden color. Generous nose. It has taken on weight since tasted last. Apricot and peach on the nose and in the mouth. High acid. I fear it …

Not much fruit here, maybe whiffs of lemon or pear, starting to develop buttery diacetyls. At first it does have a nice rocky edge, but as it sits in the glass that fades, it starts to get volatile, and after a couple of hours of air it is actively unpleasant. Drink up.

shared this with pat at selkirk manor to celebrate the end of the work week. reviewing notes posted by others, this wine appears to be on a downward slope. some light skin fruit and lemon evident but doesn't hold up well with time in the glass. perhaps it needs some shell fish to bring out the highlights. drink up.

Still enough fruit and acidity to carry this, but it is relatively advanced / oxidative as compared to an '06 E. Sauzet Puligny Mont. we had a few nights ago which I much preferred.

Bright and apple-y at first, this gained a cool weightiness over a few hours, turning very mineral and creamy. Awesome texture. Could probably spend another few years in bottle.
