Japanese whisky really does need the age. Beautiful stuff. Caramel, brown sugar, caramel, toffee, and just enough heat to keep it interesting. Nothing over the top compared to bourbon, yet still complex and very interesting.

It's been at least a decade since I've had this; truly one of the best "mass-market" whiskeys that I've ever had. Butterscotch, brown sugar, and caramel, with just the right amount of sweetness to round out all the rough edges. The alcohol never juts out; truly a masterpiece that doesn't take jumping through fiery hoops to obtain.

86 Proof Mashbill: 100% malted barley distilled in copper pot. Oak treatment: 80% sherry cask, Japanese Mizunara and 2nd fill American oak. Amber with high aromatics pushing toffee, dried, candied stonefruit, graham cracker, vanilla bean and a touch of spicy ginger on the finish. Beautifully balanced and not overly oaked. Light on its feet yet hortative. Overall: this whiskey is another fantastic example of Japanese elegance, balance and high complexity. Outstanding!

Writhing this note to remind myself NOT to chug whiskey again. Second time chugging Japanese whiskey and throwing up is not fun. The liquid itself is less powerful than I remembered.

Sampling some whisky drums with friends in Asia. Nose of citrus fruits with orange peel as well, white flowers and smoky elements. Mild palate, some peach as well together with wood and smoke. This one was easy to like, very much a middle of the road, polished whisky like most of the Japanese ones.

This is a good whisky, though a little light. Perhaps I could be more forgiving and call it 'delicate'. There is an underlying complexity, but glassware makes a difference in pulling out the most from the whisky, and some glasses leave it tasting flat and bland. The peat is fairly mild too, but present from the nose through the midpalate, less so in the finish.

Yamazaki 18 years old and 12 years old whisky - on the rocks. Had them side by side on the rocks, can really tell that there is major difference between the two wines, Yamazaki 18 years was awesome, brown golden color, cigar smoke, herbs, orange zest, and men’s perfume. 12 was much lighter in color and palate.

Served neat at Engawa @ Hamyard, London. The next level up in terms of a polished expression than the 12 albeit we also like the 12s firm and grippy style. Less smoky/pitty here , more fruity and in a way richer, rounder and very elegant. Very good.

I'm in love. So well balanced. Sherry notes come thru. Less peaty and grassy than the 12. More old wood. Aromatically intense. Just goes on forever. So smooth. Heaven.

Suntory Yamazaki Distillery Tour and Tasting (Yamazaki, Mishima, Osaka, Japan) : Pale maize color. Nose like an Islay malt, with iodine and peat aromas. This also has a smoky and beefy aroma like flame grilled burger, along with a hot and yeasty whiff of freshly-baked bread. The palate is more simplistic, with purely smoky flavors. Interesting to taste as a curiosity, but best balanced by the wonderful sylvan flavors of the other malts in The Hakushu 12 Years Old.

Suntory Yamazaki Distillery Tour and Tasting (Yamazaki, Mishima, Osaka, Japan) : Light gold color. Oaky nose, with a slight sweetness. This is very pure and clean on the palate, with bright fruit and spicy flavors. This finishes with a slightly malty aftertaste. I was surprised that this lacked the aromas of jasmine and sandalwood that I typically associate with mizunara casks. A bit more narrow and less complete than the Yamazaki 12 Years Old.

Starts hot on the palate, with a smoky persistence and the aftertaste of iodine lingering long at the back of the mouth. This has an austere seriousness compared with the nutty Yamazaki 12 Years Old, but retains the elegant balance characteristic of good Japanese whisky.

(Bo's Bday Brunner + JM farewell - for now) Bright coppery amber in glass. Elegant and approachable nose of red apples, toffee apple, butterscotch, cedar shavings - all clean, neat and elegant. Immensely smooth, dense and oily, yet a light transparency on rounded sweet spices. Pure, focused and lengthy finish. Beautiful drop, linear and elegant, almost neat to a fault. I found this to be much better tha the 12 year and worth every penny of the extra cost. Color is Copper-gold. Nose has Toffee, sherry notes as well as exotic wood and incense due to the aging in American, Spanish and Japanese oak. Premetto che non sono un gran intenditore. Di solito mi piacciono i torbati (caol ila, lagavulin, etc.) Avevo sentito meraviglie sui giapponesi. Non è un torbato ma a me piace molto. Morbido, elegante. Ottimo per le "coccole" serali. Di Più non saprei dire.
