A private dinner (Bistro Le Hollandais, Amsterdam, NL) : Made from 100% Chardonnay grown on the steep hillside carrying its name, aged sur lattes for 30 months, dosage a whopping 13 gr/l (the producer calls it "equilibré"). Fresh and clean and rounded, lemon and orange zest, supple but not really distinctive.
