Fragrant aromatics of apple, Forelle pear, lime, grated ginger and granadilla. Off-dry, there is a pleasant lime pith and zesty texture, accompanied by an energetic, almost piercing acidity that enhances the fruit as it builds towards an extended finish. Intense pure with dry chalk dust on the close. Lots of lime! 60% on red slate; 40% from shale. Natural ferment with an RS of 11.5 g/L.
