Spontaneous Wine & dine (Restaurant Brunnenstube, Beinstein) : Glass: Gabriel Standard Popped and poured. Clear, medium citrus golden color. 5 years, sure. 10 years... nah, 21 years? Never! Intense, fresh, developing nose with some peach, herbs, mineral notes. Complex and beautiful. On the palate very fresh. Nettles, gooseberry, fine stone fruit, lively acidity. Lacks depth and complexity to be truly great, but that does not matter. Such a surprise! Medium, herbaceous finish. 92-93

In der Nase viel reifer Pfirsichdeutlich laktisch, deutliche Fasstöne. Dazu deutliche Reife, etwas kräutrig und auch mit klar erkennbaren roten Beeren. Am Gaumen recht cremig und ebenfalls deutlich laktisch. Dazu auch hier vollfruchtig. Dabei ist eine ordentliche Portion Restzucker, die die eigentlich recht saftige Säure fast vollständig einwickelt. Eher breit und mächtig im Abgang und insgesamt leider etwas konturlos.

Im Duft kündigt sich etwas burgundische Cremigkeit an, mit der Zeit auch Mineralität. Dahinter Pfirsich und roter Apfel. Auch pflanzlich, Nadelwald. Zitrone. Reife, aber durchaus vorhandene Säure, saftig und dicht, mit Energie und etwas schleifend. Etwas sehr reife Zitrone, insgesamt deutlich Auf der mineralischen Seite.

Last bottle. Wiff of petrol. Very juicy, more than medium fat. Fantastic after 20 years. Today with steamed asparagus, boiled potatoes and hot butter. Classic

Bottle variation. This one is very much further along, having sweetish or anyway off dry character. Fully mature. Beautifully gentle and complex. A Wiff of petrol, in a good way. Later this was classified as their GG wine.

No slight bitterness here, so about as high as I would rate white wine. Heavenly nose and the taste is just as good. Its like being in a beautiful cloud slightly perfumed. Sort of envelopes all the senses. Our asparagus wine tonight - can't really get much better.

Nice salinity and acidity keep this vibrant. Smokey oily texture and smell add to the charm. Very nice and certainly not low 80s. Must have been in the shut down mode a year after release. Very good now, and good for another 5-7 years. There is a very slight bitter note on the finish, otherwise would have been a 93. 1,5 hr decant in a carafe.
