Tintilla de Rota is a native variety to the Cadiz region. Well exposed to the sun, the old vineyards are located at 135 m altitude, relatively high for the region. Mature bunches are selected and sun-dried on grass mats for a few days until they reach 23° Be. Fermented until the wine reaches 5%, then racked, pressed and fortified to 14,5%.
