Brilliant. Lovely acid cut. Refined yet energetic. Lemon citrus. Gorgeous bubbles and mousse. With some time in the glass this broadens and shows some brioche. Young still, but immensely enjoyable today.

Outstanding champagne. Electric and vibrant. Precise. Not sure how you improve on this one but could have used a bit of age to round out

Best since '75. Last bottle was older tasting and disappointing. This bottle brilliant, lithe on the palate, ginger and sparkling chardonnay, touches of toast, nuts, citrus (lime) and green apple. Just a delight. Young and with long life ahead. Must watch for bottle variation of course.

Champagne & Burgundy Dinner (Takashiya Brisbane) : Enjoyed prior to the 2011, 2006, 2003 and 1998 Krug. This showed the youngest of the five champagnes. Fresh and precise, lemon citrus, chalk and a delicate brioche note singing in the background. A great contrast compared to the fuller bodied Krug.

Five Decades of Bordeaux : Drank next to a 2000 Krug, and absolutely demolished it in every possible facet that a wine is capable of performing in. The nose was more advanced and less apple-forward than its base cuvee counterpart. Brioche on the nose, but more rounded and with a smattering of nutty compounds as well. The mousse here was much finer than I would have expected for a 08' champagne today, an absolute picture of elegance. The palate was …

Light gold color. Brought to Sepia in Chicago; split bottle over 90 minutes between the 3 of us (SS,CS,KB). This has some serious power and depth, voluminous in character. The nose shows almond paste, green apple, orange liqueur, nougat, green melon and sea spray on the nose as it really blossoms. The palate is full bodied, deep and intense, green apple, green melon, nougat, candied lemon, beeswax, orange liqueur, so creamy with ocean sea spray, and long, so long. Great …

Opened by a friend for seasonal drinks. This showed a crystalline lemon-straw colour with a fine bead and a very fine mousse. There was a lovely nose of white peaches, freshly cut lemons, green apples, pear, brioche and limestone. The palate is quite dense and reserved with plenty of matiere and grip balanced by an expanding gossamer web of flavour and minerals on the back palate that is very refined. There is a lovely persistence with the acid finely balancing …

Deceiving lightness, or rather weightlessness, which however comes paired with a stunning depth and complexity of taste. Wonderful, long finish, all mineral.

Pale copper color. Seducing complex red berries and notes like barrel aging which is in fact probably from the ripe Chardonnay used in the blend. Very fine bubbles and excellent very long finish.

Opened to celebrate the birth of a new Grandchild. The 2008 Dom did not disappoint with a crystalline lemon-straw colour and a very fine bead. The nose shows a finely tuned array of freshly cut lemons, green apples, pear, brioche and limestone. The palate has opened somewhat with aging reflecting the fruit characters of the nose with plenty of matiere and grip balanced by an expanding gossamer web of flavour and minerals on the back palate that is very refined. …

Lingering mousse with a fine, persistent bead. Youthful straw yellow color. Toast, apple, yeast and marshmallow with citrus undertones, this still seems quite youthful. Flavors of ripe apple and candied lemon with a vanilla fluff note in the finish. Such a great bottle of Champagne. 95-96 pts. (TLV)

Quick note. Lighter and more approachable than I remember. Served blind to experienced tasters (albeit at the end of a long session) and the guesses were late 90s or early 00s. Great acidity and balance. Extremely refined and classy. Should be a real beauty with proper age but fun to try this one young.

M&PD Tasting: Westward (Seattle, WA, USA) : Special gold label. Explosive energy, density, this reminds me of the 1996 Dom from it's youth, more of a White Burg that has some bubbles. I kept coming back. This is a WOW wine!

Drank three Doms together - MPD Westward: 1995 Dom Pérignon Champagne Oenothèque: couldn’t really evaluate this due to light oxidation. The 1996 is a stunning wine, and assume this could be too from some of the notes in the distance. 2008 Dom Pérignon Champagne Brut Chef de Cave Legacy Edition: I’ve had numerous bottles of the regular label 2008, and this tasted richer but less lively to me - so it must have been the bottle. No idea. P3. 2012 …

Dinner at Iki Ramen vol.II (Iki Ramen, Los Angeles CA) : The nose is deep and flowing with gorgeous tones of red apples, quince, nectarines, pears, biscuits, bakers' vanilla, warm dough, toast, and yellow flowers. The Medium bodied feel shows off a lot of depth and refined texture along with crisp, high acidity. The finish really doesn't quit and this is a real delight across the palate. This is evolving beautifully and is showing so well right now. There is …

Popped and poured. Drank over 2 hours. First bottle of a case purchased upon release. This is drinking very well now. This 2008 comes across richer and more on the orchard fruit spectrum than most Dom vintages. Vibrant acidity keeps it well balanced. These should drink well for many years to come. Excellent.

Holiday Champagne Gala (Wilmette Harbor Club) : Walkaround gala tasting. Crisp yellow and green apple throughout, this has an engaging brightness with sneaky good power and length. Wonderful balance.

The nose is pretty immediately, but this needs at least 45 mins or so in the glass to open up. Precise and very finely proportioned, ultra pure, and so harmonious that it feels spherical and because nothing whatsoever sticks out, it can also seem like not a lot is happening. But for me the point of the wine is that perfect balance and delicacy, that it is a perfect sphere. two hours in it takes on a prominent saltwater aspect …

Big decisions call for a Big House champagne and the DP Legacy Edition fit the bill. Popped the cork for approximately 60 minutes prior to the first pour. Serving temperature maintained at approximately 50 degrees in a U-Line U-Chill throughout the 3 hours of consumption. Stemware used was a Grassl Liberte and a Zalto Champagne Glass. The wine showed beautifully out of both stems but the Zalto ended up being the preferred glass for this champagne. The champagne was paired …

Nose of pineapple, apple, chalk and hint of honey. On the palate the same along with some floral and peach touches. Still very fresh. Really amazing the definition of the fruits; very precise flavours amounting to a real complexity. A notable savoury undertone to it. Later with air a bit of brioche and ginger. Great acidic balance and structure. Not overwhelming acidity. Fine effervescence. Long finish revealing the different layers of complexity. Very pleased to have tried this. I'd love …

This wine was served to celebrate the legacy of my in-laws 50th anniversary while in St. John's. I think time, place, people, and meaning can deeply impact how wine is remembered or appreciated. This was the best bottle of 2008 Dom that I've had to-date. There was a deep and complex nose that shifted each time the glass was lifted for a sip or a sniff. The wine was bright and focused, with a mid-palate that seemed to shift like …

Nebbiolos, white truffles, Volume VI (Chicago, IL) : This bottle at first started off extremely acid-driven, and all the other stuff that this wine is all about wasn't apparent at all. In fact, it felt shrill from the heightened acidity and at the same time lost a lot of its complexity. This was much better about six hours later; more of the biscuity elements emerged, and the wine had a much fuller palate presence. Could it be that this is …
