A friend shared this at Thanksgiving. I am confused with previous tasting notes. This was awesome and really shines as an aged cabernet. So smooth with all elements coming together seamlessly

No question now past its due date, but after decanting twice and waiting for an hour, it became eminently drinkable. Like a lost memory regained. A bit bitter at the end, but still there after all these years.

Medium garnet red. Slightly dirty and earthy on the nose as well as some soft dark plums. Moderate tannins (5.5/10) and medium plus bodied. Very impressed with this bottling. Lots of dark cocoa and berries. Very well integrated and soft. Well rounded and solid 16 year old. Drink now.

Had a bottle a month ago that was decanted for an hour but never really opened up. This time around did a double decant and left for 2 hours and it showed very well. Still has some fruit to it and is nicely balanced with good mouthfeel and soft tannins.

Plum on the nose giving way to a dried plum palate. Finish is not too long but decent. Past its prime in the split bottle.

Flat at opening, with jammy fruit. Peaked at 2 hours with a great palate and finish. Trailed off at 4 hours. This wine is on the downslope, drink now.

Balanced with a beautiful subtle nose, good mouthfeel and a nice 30-second finish. Well integrated and drinking well right now. Better after a 48-hour slow ox than after a two hour decant on the first day.

Hitting on all cylinders. I was afraid it might have peaked some time ago, but tonight it was wonderful.

decanted 3hrs and then had with BBQ ribs. Ribs over powered the wine a little as the tannins have faded but still slightly there. May want to drink these now as its still very nice wine with mature nuances but definitely a little on the back side of peak, IMHO.

First night had this one with nice steak. I found good Cab nose and bright fruit on the palate. Acid/tannin balance was great and I considered the wine well integrated and made. On 2nd night the story was a little different. The fruit had waned considerably and a strong vanilla and oak came forth that was not really appaarent on 1st night. 2nd night was with cheese and sausage, so maybe that is what made the perception different, but I …

Cork came out too easily. Slide out and pour. Brick dust rim with a burgundy shoe polish core. Aromas smell faintly corked with distinct brambly scents. Tight entry. Blackberry juice, black pepper and then some astringent oak on the slightly tannic, slightly drying finish. My wife liked this quit a bit. Scored for our average.

Was worried that this bottle might be well beyond its prime; it was overlooked somehow in my cellar. Very pleasantly surprised to find that, not only was it very drinkable, it was an excellent wine. Very smooth with soft tannins and a hint of tobacco. Wish I had another bottle in the cellar.

This bottle is "over the hill". It smelled of old tires or some similar man-made item. It tasted very over oxidized with a sharp raisiny character. Too bad we paid no attention to this bottle.

Consistent with my prievious tasting of this wine. I am in the camp where the so-called "Modern" style of Napa Cabs is not really viewed as a positive. I generallly lean toward less oak, less alcohol, and a strong effort made to balance the acid, fruit, and tannin. Honig does reasonably well, even though some call it "modern".

Very fruity without a lot of complexity. I generally always like Honig CS and this was typical of their wines. Not a great wine, but very good. You would not be embarassed to serve this to friends.

Wine has a great deal of positives to offer; bright fruit, interesting and nuance Cab nose, acid level appropriate for a meal, and tannins that are complementary rather than dominant. The level of oak was also just fine for me and I am not a big fan of oak. The finish was medium to longish, which is a good way to keeps one's interest up in the wine. So, why only an 89? It has all the right pieces, but …

This bottle disappointed me which is hard for me to write because I have been a huge fan, esp of the 2005 vintage. Probably not fair, but I had this after the 2003 Caymus Cab. This screamed oak monster and seemed a bit astringent, although there was still plenty of fruit stuffing left. I think this will still go a while, but I'm not sure what was wrong with this bottle, if anything. Perhaps it was the fact that it …

This one has smoothed out and integrated well - drink up. Wasn't the best vintage (2001, 2002 and 2007 stand out to me) but giving classic Honig dark fruit, mocha, and vanilla notes now. Some will find it too oaky and modern, but for the price ($26-$34) it's hard to do better in Napa Cab...always a go to on if it's on the restaurant wine list.

Popped and poured. Deep purple/garnet. Expressive aromas of ripe black fruits, creme de cassis, herbs, old cedar, and roasted sweet corn (the latter a note I often detect in maturing Napa reds). Medium-plus body. On the palate, the fruit is initially slightly muted; however, after 15-20 minutes everything algins and opens beautifully to show hedonistic, almost exotic notes of ripe blackberry, plum, milk chocolate, spice, and toasted oak. The tannins are smooth on the moderate close. Although lacking in complexity, …

News Years at the Fairmont - Many wines were had, it impossible to remember what they were like. Bennett Lane Maximus was drinking really well, great fruit upfront . The Cab had darker fruit, was a bigger wine that will get better. The Honig was well balanced and Ladera had bright fruit, color and clarity on all wines was excellent.

To me, this wine showed dark, black fruits with a hint of toffee and vanilla. Soft, smooth and easy drinking. I enjoyed this more than the 07 Carlisle Carlisle Zin as it had a little more going on and didn't seem as sweet in comparison.

TN: Honig Vineyard/Winery Napa Valley Cabernet Sauvignon 2000; Kroger, $35/750 ml. Purchased and drunk with some lamb shanks and roasted vegetables on Easter Sunday. Sweet, milk-chocolate and cherry nose; medium-bodied, with very little soft tannin. Only interesting thing is that there is actually a honied note about this dry, soft, consumer-friendly wine. Should I have expected that given the name of the maker? Nothing especially breathtaking but quite pleasant. To be fair it's possible that this bottle is shelfworn.

For what anyone has to say about the '00 Napa vintage, this wine can proclaim... Nothing special, in fact I couldn't finish the bottle after 3 days. I've begun to find the vegetal tones of Honig wine (after two vintages) to be like another family's log cabin; friendly yet not inviting. This bottle could not have been more disappointing given the rave reviews of the '01 and '02 which pursuaded my 4 vintage vertical purchase of this wine. Alas, I …

Medium body with chocolate overtones and very balanced. Decent finish with no harsh tannins. Nice, solid Napa cabernet meant more for food that drinking alone. We had it with a cheese course as well as baked balsamic figs with goat cheese and it held it's own. Drink now while the drinking is good.
