2019 vintage 80% pinot, 20% chardonnay. 0g dosage, disgorged 1/23. This bottling is drinking well/has improved over the past year. Deep gold color. Nose: Bruised/baked apple, toast, bit of honey. Palate: Rich, toasty; same as the nose. Very dry. Fine bubbles; good carbonation. Pretty versatile. May be very slightly geared towards a more experienced crowd vs. being a crowd pleaser given zero dosage, but overall clean and easy drinking. Remains a house favorite of ours. Prices have been going up …

Lovely Pinot driven Champagne from Pierre Paillard. Needed an hour to get around but such lovely aromas of delicate red berries, grape fruit, stone fruit and hints of white flowers. Quite vinous on the palate but good depth. The low dosage keeps it nice and crisp as well. Love it.

A cuvée I have not opened in quite awhile. Found some 375ml’s and since it was one of the few 375ml Extra Brut’s available, easy to grab a few. Enjoy this cuvée from Bouzy. The is 80% Pinot Noir & 20% Chardonnay. Disgorged 1/23 @ 1g, making it technically a Nature on the champagne sweetness scale. Base yr 2019. For its quality, still nicely priced w/ ever increasing champagne pricing. The nose reveals; ripe & macerated yellow & white stone …

Wimps Australia and New Zealand lunch (La Trompette, Chiswick) : Initial froth settles down to a nice bead of bubbles. Bready nose with red fruits intermixed with citrus. Good acidity, ready, nice brioch flavour with fresh lemony fruit.

Pretty yellow. Lots of medium sized bubbles. Drank at 54 degrees. Peach, marzipan and fresh baked bread on the nose. Fresh fuzzy peach, brioche, lemon zest and vanilla oak on the long finish.

Nose: a little tight upon opening. Little lemon. Little overripe/bruised apple. Palate: fine bubbles. Not tons of fruit on the palate. But nose comes through a bit. A little salty on the finish. Very lean. Price to qualify tough to justify for me. But nothing is cheap in champagne

Edition XIX, which I assume means base vintage 2019? This is showing a surprising (in a good way) amount of oxidation. The nuttiness combining with the brioche (good amount of autolysis) is one of the best flavours in the world imo. And it gets there whilst retaining excellent freshness and some density/fruitiness from (I’m guessing) a reasonable amount of Pinot. Top stuff. I bought 21 bottles because I had access to an insane price, but I wish I bought more …

Drunk alongside Larmandier Bernier Latitude. You could clearly feel the Pinot noir here as well as the low dosage. I thought this was great, loads of character, complexity and really quite vinous. Wish I had more bottles!

A blend of 80% Pinot Noir and 20% Chardonnay from Bouzy Grand Cru. 2019 base vintage. Barrel fermented. 30 months on the lees in bottle. Disgorged in May 2023, zero dosage. Medium gold. Ripe apple, berry notes, almond paste, bread crust, biscuit, and underlying mineral tones, with medium-fine mousse, and good length of the lightly bitter finish. The champagne drank well over a period of three days. By day three, the mousse had softened, the wine had become more autolytic, …

Mostly 2021 juice. Full yellow. Deep and serious with dark fruit and a touch of oxidation. Very, very good although it would probably be outclassed by other Champagne in this price range.
Taster #8077 · Nov 22, 2025
What a change from last bottle. This has mellowed and gained in richness and lost the 'sharp bite' the earlier bottles had. Drink in 25 or 26
Taster #2032 · Nov 22, 2025
Very enjoyable and quite a solid value in bubbly; the nose has ripe orchard fruit with hints of strawberry alongside, some autolytic notes, a creamy pastry dough hint, lilac and some minerality. The palate is rich, but with good energy. Lovely. First wine drank in Darsonville champagne glass; seemed like a winner

La Fête du Champagne Grand Tasting (Pier Sixty, Chelsea Piers - New York NY) : Walkaround tasting with producers. XXI, 2021 base, 100% Pinot Noir, 3g dosage. Rich berry throughout, on the lean side but some textural richness on finish. Very good length. I preferred this vs the 2020 base tasted one week ago.

La Fête du Champagne Grand Tasting (RPM Seafood - Chicago IL) : Walkaround tasting with producers. 2020 base mostly Pinot Noir, good richness with a plump middle, just faintly tart from the middle forward. Slightly more extra brut than I'd prefer.

Eagle Brook Wine Society: Whites, Rosés, & Sparkling & Champagne (Eagle Brook CC) : A 50/50 blend of pinot noir and chardonnay, disgorged in December 2013 at 3.5g/L. Mature yellow color with a medium mousse and bead. Aromas of bruised apple, cashew and pastry dough. Apple, lemon curd, blanched almond and pastry cream. Would have loved this with a cheese board or perhaps a pasta with a creamy mushroom sauce.

Dinner with Friends (R&R's) : Served double blind to the group. Deep color hinting at its age. Short mousse. Toasty and rich, with orchard fruit and chalk notes as well. Medium bead. Flavors of apple, vanilla crème and toasted marshmallow. Has that pleasant nutty element that comes with mature Champagne. The best of the three with the ravioli. An equal blend of pinot noir and chardonnay, disgorged in December 2013 at 3.5 g/L. At peak for my palate; drink up.

Restrained toastiness on the nose paired with almonds and a seaside breeze, but not much fruit. Strong bead and high acidity, lively for a two decade old wine. The palate contrasts the nose, immediately focusing on lemon lime spritz followed eventually by white minerals and a touch of creaminess. Lovely champagne, but surprisingly possibly better in 5-10 years

Woodward Cellar Emptying; 5/15/2020-5/16/2020 (Woodyville) : Fantastic Champagne that may have benefited from the pairing and situation... But STILL, an open nose of white citrus and bread, a touch of pinot berry, green apple, white peach and a saline finish. WOW! Has 10 years if you like them mellower.

MNB: Old wines (Home (Noe st)) : This is the strongest reaction I've ever had to a Champagne - I couldn't stop smelling it, and the detail and deliciousness on the palate were distractingly good. Medium gold color. Aromatic, appetizing nose with developed fruit (ripe apples with slight spice, ripe Meyer lemon), and a rich chorus of autolytic aromas. Toasted brioche with slight coffee, parmesan rind, nutty baguette notes. It has an element of the coffe-like notes I'd encountered in …

Very pleasant - a nice wine to go with dim sum. It fared well with crispy roast pork belly as well. The nose was on the quiet side, with subtle notes of apple flesh, chalk and white bread. The palate was very sleek and polished, with a lovely sense of harmony and balance wed to the serious focus and definition that the better Champagnes of the vintage have. Here, a really fine mousse and gentle but persistent acidity wrapped themselves …

Pretty toasty yellow. Sweet nose -- bread dough, lemon zest and a hint of peaches. The yeasty bread notes that others mention are dominant, with some lemon, lime, and sweet coffee cake. This is an outstanding wine and an especially great value.

Bye Bye Timmy (Convivial - Washington, D.C.) : From magnum. Another killer bottle of this champagne. Had a real brightness/freshness to it that made it feel younger than it's actual age. Great toasty flavors of hazelnut, brioche, and cream. Palate was zippy, but also had really nice depth.

Tasted along side Pierre Paillard '02 for New Year's eve. Among other tasters, it was divided 3 votes for the '04 and 4 votes for the '02. My vote was they are different. The '04 is still more citrus/lemon front compared to the '02 that balanced it abit more. Over the evening, the 04 actually got better than its initial performance and reminded more of the balance the '02 carried. But, at PnP the '02 still wins at this time. …
