Reduced style, which I like. Lemon rind and celery. light and lean but lacking in body and somewhat dilute. Nice, but overpriced for me around $35.

Not bad. A bit tight to start but opened up a little over an hour+, developing a pleasant creaminess and red apple notes. An interesting hint of clay in the aroma at one point. A nice accompaniment to baked cod with red chard and white beans.
