Wines with jerk chicken (Chicago, IL) : From magnum. An interesting Champagne, but I didn't care too much for this tonight. It's a bit high-toned and missing the vintage's ripeness that I would have expected. Though I didn't check the dosage, to my palate this feels it's a few grams too short.

Medium yellow. Brief burst of froth. Complex nose of hay, herbs, and citrus. Medium weight, minimal perceptible sweetness. Creamy entry with light autolysis, bright lemon, early mellow tones of maturity, and terrific acidity and stone finish. Although it was initially served too warm (my fault), it never relinquished its shape or focus. I loved this bottle.

I had to revisit this at home just to retest my faith in Claude Cazals, after a rough tasting at the domaine recently where the 2014 Clos Cazals was a comparative wreck. Thankfully this 2012 is as solid as ever. The 2014 was…… not.

Dinner at avec River North (Chicago, IL) : Great stuff, especially in the context of my relatively muted enthusiasm for non-Grandes Marques champagnes. The vintage here yields a fair bit of fullness on the palate and there's a good dense core of fruit and minerality here. Impressive.

Even better than last year. With a bit of air, this becomes a phenomenal BdB, marrying controlled depth and ripeness with judicious acidity and chalky cut. Finishes both savory and uplifting. Drink now for fun or hold to see what complexities lie ahead. Much more affable than the more spun up 2013 at the moment (no surprise there).

CdB BoG; 1/25/2024-1/27/2024 (Denver) : I have a few bottles of this in the cellar but had never tried. So it was a nice surprise when after drinking a glass and loving it I went to check the label. Lost my notes but I was impressed how open this was, a nose I could smell all day.

Pop and pour. Fantastic complexity and poise. Lovely BdB. Intense, but elegant nose of lemon, soft vanilla cream, lime. Lovely mousse, amazing acidity, more lemon and lime. Gorgeous btl and my champagne of the night.

Nice bottle. Amazing bubbles and mousse. Decent flavor profile and balance albeit not a wow in any sense based on finish and complexity. Opened up over the course of the hour we consumed the bottle. My last bottle. Has taken on a golden hue. Mature notes of apple, subtle toast, spices. Very expressive, rich without being heavy. Great bottle of Champagne and time to drink up based on this bottle.

Not a lot of this floating around, and my advice is get some! Not as other worldly as the 08 but dang close. This is zesty, full bodied, a complete wine. Highly recommended.

The nose conjures green apple pie with flakey, buttery crust. Take a sip, and a surge of bright tart apple acid complements lemon rind before fading into the lingering taste of fresh baked brioche and toasted hazelnuts.

Exquisitely balanced, with a judicious flavor equilibrium between the lemon and chalk/salt notes that are harmoniously carried on a fine bead of effervescence, the 2012 Clos Cazals is a winner. Alongside the '04 Celebris. These show more similarity than one might expect; in fact I might have guessed this as the blend and that one as the BdB. Consistent with my last bottle; moderately rich and powerful, but still elegant. Starting to develop some complexity, though early in its maturity. Try again in 2-3 years.

Three years since my last bottle, and this is starting to come around nicely. Shows the house style with some Krug-y power and weight without being heavy or overbearing. Early in it's drinking window, this is starting to develop some nice complexity. Really nice.

A: medium gold, a little light on the bubbles N: dried apple, dried orange skins, toffee, almond paste P: dry, high acidity, medium (+) body, pronounced intensity and medium (+) finish C: I love it. 18yr old chambers. Fruit is well developed. I think this is outstanding quality. I would drink this in the next 5 years. Not a lot of room for further development.

The Rotating Dinners, I.4: Cote des Blancs (Chicago, IL) : A bit of a rarity, at least in the US, if my understanding is correct. A very interesting nose, with some herbal elements of licorice and fennel. The palate on this is really bright, with some tasty lemon peel flavours. Vertical magnum tasting of 1999, 2000 and 2002. The 2002 was surprisingly as evolved the 1999. The 2000 came of as the tastiest and also the freshest of the three vintages. Fine, but not exceptional.

Hot Paris Nights-Mainly Whites; 6/26/2010-6/28/2010 (Paris-Various Locales) : Pale and frothy. As light as the Drappier was for a Pinot Noir wine, this was as full for a Blanc de Blancs, but dry, exquisite balance and minerality.
