Billecart-Salmon, Blanc de Blancs Brut Vintage

Meeting a friend for drinks at Cucina Alba in New York City, we immediately spotted this bottle off the wine list. Having opened up a birth year 1998 vintage of Billecart-Salmon's Blanc de Blancs (which eventually got named Louis Salmon) in December, and marveling at how well it had matured, I was excited to try an even better vintage from one of my favourite Champagne houses. This bottle was in a perfect spot this evening. Soft but persistent mousse. Lovely acidity along with charming fruit. Hard to ask for more from this bottle.

Last tasted 7 years ago. After 60 minutes this opened up nicely. Light on its feet with nice balance and a persistent finish. In prime and will hold for 20 years. Delicious

Pale yellow, lovely graceful bubbles. Looks so appetising. On the nose a lemony, waxy, brioche and lemon butter. Palate wise intense still, proper French chardonnay mouthfeel, a Grand Cru Chablis that has never lost it's desire to be Champagne. Seriously romantic and such wonderful vinosity. Years ahead but perfect right now.

Quite good compared to the others I have had.Strong acidity and good balanced fruit. It even seemed somewhat young. The best glass was the last. The wine still has a short aftertaste. This particular bottle told me there is a long life ahead still.

Good fruit and acidity. Nice mousse still. A little sulfer in the aftertaste sometimes. It doesn't have a long and lingering aftertaste. Crisp, fruity and fresh is the impression. When you have the name of Billecart Salmon you should be able to do better and a otherwise good year.

There's an amazing amount of fruit left on this wine for its age. Notes of apple, peach and stone fruit. There was a creamy, hazelnut thing going on as well. Pretty long finish. Great bottle.

Beautiful yellow colour with a golden touch. Nice mature nose. Yellow apples, walnuts, dark chocolate, pears, lemon pie, pie dough, dried apricots, peaches, minerals, with sweet lemons at the end... The taste is fresh, lively with nice acidity... Really good. Mature but will probably improve for a few more years.

Out of this world intense flavors of biscuity goodness, brioche, peach pit, silky and pure on the palate, fine bubbles, super long. What else could you want in a champagne. This is the yin to the '04 Bolly's yang tonight. Both great but different wines. Might give the nod to this BdB though. B&J's

I found most complexity in the first glass, which might have been notes of reductive nature. With some air these funky, yeasty notes evaporatef and the winebecame very focused, but also a bit simplistic. Excellent champagne with potential for sure! Judging from the cork, this was disgorged 3-5 years ago.

Wines & Steak in Toronto (Le Select Bistro, Toronto, Canada) : Just so very crisp - the acid comes right at you on the initial sip and then slowly fades over time in the glass. Initial flavors are lemon and maybe even a bit of butter. Becomes soft and smooth with time and then I start to get a hint of toast on the finish. Great start to an evening.

Deep yellow, minimal remaining mousse. Charred oak, a bit of yeast, and caramel. Not nearly lively enough and too damn much wood at this point in its life.

Still a very good glass of BdB. Good Chardonnay fruit, chalk, brioche, hazelnut, lemon with quite high acid. Short aftertaste on day 1, but became longer on day 2. Seemed like some time still before it is ready. Good mousse.

En riktigt bomb till champagne, doften är nästan vulgär men ack så härlig med brioch, brända fat, krut, massa härlig kanderad frukt, marsipan och äpplen. smaken är juvlig men kanske är doften bättre än smaken på detta vin näsa 96 smak 93 så det får bli en 94. Lite av en håll-käften champagne att ta fram om man vill visa hur mycket smak & doft det går att trycka ner i en 750ml flaska.

Vilken underbar utvecklig sedan jag drack det senast. En kraftfull doft med röda äpple, marsipan, massor av mineral, citrus och lite nötiga toner. Väldigt bra balans med ren fin syra, massor av frukt och lång fin eftersmak med lite peppriga toner i slutet.

Doft av choklad, kaffe, knäck, bränt socker. Lite söt i smaken och bra syra, men lite trött och inte riktigt på topp. Däremot var den underbar att sitta och dofta på. Växte under kvällen. Scent of chocolate, coffee, toffee, burnt sugar. Slightly sweet in flavor and good acidity, but a bit tired and probably over the top. On the other hand it was wonderful to sit and smel on. SOBER tasting (Dan's place) : Beautiful, nutty nose, with a bit of brioche. Apples and a touch of lemon on the palate. Acidic, well balanced, and beautiful.

A lovely BdB. Amazingly young and pure chardonnay flavor. Citrusy like a Chablis. Not tight but fairly narrow in focus. I expected a bit more brioche or leesy yeast. The only sign of its age is that the acidity is nicely integrated rather than green and spikey. Would be a nice complement to oysters or asparagus.
