Allowed to breathe in glass 30 minutes. Clear yellow-gold with fine bead. Pleasant notes of ginger ale, apple cider, chamomile, limestone, lime zest. Improved with air. Evolving nicely.

Clear yellow gold with persistent fine bead. Some initial mustiness like a stuffy attic, improving with 30 minutes of air. Complex, mature bouquet of ginger ale, apple cider, grapefruit pith, dried chamomile, chalk, hint of almond biscotti. Similar on the palate, fresh, lively acidity. Doubt this will improve.

Clear medium yellow with fine bead. Generous bouquet of bruised apple, apple cider, hints of ginger, butterscotch and chalk. Similar on the palate, pleasant acidity, full body. Seems a bit oxidized or just getting tired?

Clear yellow gold color with persistent fine bead. Lovely bouquet of quince, apple, lemon, biscuit, with hints of ginger, cashew nuts, limestone, mushrooms and alfalfa. Similar on the palate, fresh and pure. Beginning to show more complexity with age.

Clear light straw yellow with persistent fine bead. Generous bouquet of apple, perhaps bruised apple, chamomile, with hints of biscuit, lemon, and limestone. Showing mild oxidative signs of age. Fresh, crisp, lively on the palate. Excellent by itself and with raw oysters.

Shared by Javachip. An excellent Champagne coming into its puberty (years to go). Oxidative to start with mushy apple, chalk, bread, and lemon rind being offered up. Great on its own and with oysters but it makes me declare this as a "dinner" Champagne, to be paired with food.

Lovely Champagne! nose of citrus, almonds, toasted bread, caramel. really pure. palete is crackers, almonds, citrus, a nice mouth-feel with tiny little bubbles. This champagne is in its first maturity-window and will develop more if you just can keep your hands of your bottles. This wine was served from Magnum. 93>

Super Spaniards (Top Deck, Jumbo Floating Restaurant, Aberdeen Marina, Hong Kong) : Quite deep gold colour. Very fine bubbles. Reticent nose of shortbread and Butter Osborne biscuits. Absolutely lovely soft biscuitty and toasty palate with lemon rind, a touch of Imperial Leather soap and some blueberries. Very impressive.
