Very light and very clear. Typical scents, but a little more muted than normal for this producer and vineyard. After all, this is a vintage that's a bit below par. It gains a bit more body with temperature in the glass, but it's an elegant wine more than a food wine. I'd say it's very good, but it's hard to argue for it being really excellent.

Thursday Evening Cantonese (Phoenix Palace) : I thought this - another traditionally-made wine from a cooler vintage - would show similarly to its flight-mate the Bachelet, but actually it was flashier, and quite concentrated for a 2013. This is one of the bottles we drank too quickly... Needs a lot of time, then develops nice blackberry and raspberry jam aromas in addition to the mushroom and forest floor. Perfectly balanced on the palate, with some attractive fruit, even some sweetness. Give it at least 2 hours I'm excited to see how my other bottle will develop!

With 90 minutes of air, layers of black raspberry, sinuous streaks of iron, earth, and crags on the palate, with a strikingly persistent elegant touch. Brisk acidity and prominent tannins. Longer finish of red and black berry fruit cut with rocky iron-laden soil. Should not be this delicious in its awkward adolescence, but it is.

Pours black but the palate says “red cherry”. With airtime to open, there is juicy vibrant red fruit (this is a 13’?) backed by tooth-gripping tannins. 13.5% Alc. Rustic? Yeah, a bit. Tasty? Also yeah, and years of development still in the tank. Once again, Chevillon NSG Cailles makes a delicious case for itself in the glass.

Found myself with a distinct hankering for classic Burgundy after all the Spatburgunder/Pinot Noir on the recent trip. Curiously, Chevillon often feels like the anti-Gouges to me in profile despite their winemaking approaches sharing many similarities - full destemming, cold maceration and long soaks, and restrained new oak use (20-30% generally). I thought this was very good if not fully resolved or expressive, it showed it's class with proper definition and depth. tannins were still fairly prominent although fine boned. i didn't find any green notes, and the fruit was pretty reddish black even if it wasn't super bright. like most 13s right now, at a good stage and was disappointed when the bottle was finished.

A medium red, slightly translucent. Decanted. Very aromatic, cherry, cranberry, fallen leaves, mushrooms. But it is on the palate that this really shines, it is magnificently smooth, silken and precise, a weightless elegance about it, with the fruit and acidity in perfect harmony. For me this is the very essence of pinot noir and when I find a bottle that behaves like this it is a very good day indeed. Absolutely splendid.

Enjoyable bottle of Les Cailles. Standard Chevillon NSG from a forgotten vintage. Ready to go with fruit still present and no tannins to speak of. My only gripe is that I'm hard pressed to see this vineyard of being any more substantial than the lesser tier Chevillon bottlings. I honestly enjoyed a Chaignots from 2013 more than this bottle. Solid but I don't believe its worth the premium pricing.

Incredible nose of cherries and spice. Very Vosne I kept thinking to myself. Tannins resolved but needs a decanter and air as it opened up in the next 45 minutes. If this is indicative of the 2013 vintage, it felt slightly a bit thin but overall, this was a resounding success and speaks volumes about Chevillon as a producer. This was really impressive especially for the $80 I paid.

After a bit of aeration, beautiful earhty, gamey nose with spices, dried meat. The palate is lovely too, medium bodied, fresh, good stuffing for a 2013, tannins still young. I had this side to side to the Les Cailles. It confirms that the Les Cailles can be approached at age 10 but the more structured Vaucrains needs more like 15 years. This is no different. Light weight, subtle and fine-grained, with cherry, saline and chalky flavors coming across as refined and silky. Perfect extraction not heavy or too thin. Finish is gripping and long. Full and rich pinot noir fruit on the palate and a fine acidity grip to keep everything together. Long finish with dark ripe cherry, hints of tobacco and cedar.
