Lovely bright pale yellow. Nose of apples - some caramelised, some fresh - and lemony biscuits; some caramelised peaches too. A little white pepper. Fresh and bright yet creamy- peaches and cream-like. An exquisite lemon cream finish.

Lovely buttercup gold colour. Nose of buttered toast; russet apple peel; a little burnt lemon; rich but balanced aromas. Much better than previous bottle - drinking really well now. Lemony butter with apples. A long apple finish becomes drier over time. Some butterscotch flavours.

This was a disappointing bottle - a one-off or a new phase? I find it impossible to know if this will improve or not - hope so over the next few bottles. Light-medium gold with hay-like colours. Nose of buttery crumble-like apples and biscuits. A slightly less mellow, acidic edge at the back of the nose. Fat- could it even be flabby? - but then there's an acidic streak behind. Intense apples with butterscotch custard if there is such a …

Light gold with some darker hints starting to creep in. Baked apples with a little wood on the nose - also some lime, chalk and the first hints of wet moss. Flavours of apple juice with some pear. Still good acid but some sweeter age notes starting to creep in. A lingering finish with some apples.

Pale Gold. Nuts on the nose - almonds, some baking aromas and then some more piercing apple and lime; there's also something deeply aromatic - could it be juniper? Rounded, buttery and nutty to taste initially but this gives way quickly to apples and citrus with a fresh, almost spearmint edge. Needs time to settle, but this is good. The finish zings with acid and some black pepper and seems to go on forever.

No detailed note. Rounded, buttery and with a good structure, but nevertheless this feels like it needs a year or so more to settle.

We shouldn't have had another bottle of this so soon, because it does need more time to mellow and come together, but it was tempting... A colour reminiscent of hay, but shiny - something almost a little ephemeral about its look. Nose of lemons and burnt lemons, a little biscuit, some crisp apples; in fact the more acidic aromas dominate, but are sure to settle in time. Sharp apples to taste, balanced with some cloudy apple juice. A slight buttery …

A lovely hay-infused light gold. Not giving too much away on the nose: a little roasted nut and marzipan and a gentle mix of tropical fruit and floral, some bright citrus (lime?) and pear drops - but despite all that, still fairly muted. Taste is bigger than the nose. Mixed apples, pineapple and other tropical fruits. The texture is simultaneously buttery and zesty. Fresh but nutty; all sorts of contradictions and complexity. The levels of fruit and acid suggests this …
