Interesting that the 97 came across as fairly oxididative with cashews, bruised red apples, brioche and buttered popcorn on the nose. The palate is creamy with bruised apple and a line of minerals - balanced acidity. Over time a touch of sweetness comes forward on the palate with a long finish.

Drinking at its apogee now. 1997 Salon is drinking at its sweet spot. It always takes patience to enjoy Salon which can last for a very long time. Pronounced nose intensity with notes of mineral, peach, apple, bread and white flora. High acidity and long finish.

Deep golden with medium intensity and aromas of grilled citrus, red apples, braised apple , toast, nutty, roasted hazelnut, light oxidative, mushroom, nougat, developing. On the palate the wine is dry, with fine mousse, high acidity, medium alcohol and medium - body. Multilayered flavors of primary citrus (grilled lemon, lemon peel), tertiary flavors of rosetted alomonds, hazelnut , marzipan, sherry, the intensity is pronounced and the finish is long. SangioFest, Volume IV "Merry Christmas 2010 Denise and Mike" (Chicago, IL) : Not a great showing of this, if it wasn't corked. Plenty of old chardonnay funk, with a bit of a woodsy quality that was at the very best TCA-adjacent. The extremely tight cork which broke had to be extracted with a corkscrew, and yet there was scarcely any fizz left in this wine.

PnP. My first 97 and it tasted quite young and a bit tight at first. A touch lower acid and less body compared to the 96. Time in the glass continued to soften the structure.

AK's birthday dinner : From magnum. Pristine, elegant and focused, much more expressive in the Sensory than the restaurant white wine glass. Unlike the ‘99 a few weeks back which was tight, this was approachable without showing any oxidative and nutty notes. Rich without weight, high acidity that made the wine less sweet than I expected. One of the most memorable champagnes that I've had, up there with the '02 Clos du Mesnil from the same friend.

"He looks like a tubercular musketeer" (Chicago, IL) : The best showing of this that I remember having. Very zippy and electric, maybe almost to a fault. Next to the tauter 1996, this was far more expressive on the palate, with a slight bit of roundness and breadth that I really appreciated. The fruit profile veers more white than yellow, and while there's clearly some chalky minerality on the palate, it's not too pronounced. Very much in the zone now.

This has incredibly fine mousse and bracing acidity. This is easily in my top five champagnes I have tasted. Drinks like a grand cru white burgundy but with super fine bubbles. This wine has the structure to last easily another decade but I do not see it getting better than it is now so time to pop a cork.

Mom's 82 birthday at Joe Fortes, then home to Breka Breads London Fog Donuts Clean, and clear, faint yellow in color. Lemon poppy seed cake, brioche, nice salinity. The nose is beautiful! Still tight and astringent. Bracing acidity. Still incredibly youthful. Needs more time. Lovely bottle. Is it worth the price???? I am not sure. (-1) point for price.

I didn’t expect this to show this young, hardly any signs of age at all. Searing acid and bright fruit, lots of intensity and concentration framed with deft touches of creamy vanilla oak. There is no doubting the quality here. Legs to go for another decade where l think it’ll show even better than today.

flawed cork, broke and crumbled but left a segment plugging it nonetheless I used a large knife to 'sabrage' it open but there was no rush of foam. it was not truly flat and the wine flavors were decent but it was not in great form.

Stunningly good, after 26 years this wine still shows gorgeously intense yeast and brioche. Color is bright yellow gold. The opening bouquet is complex and bright, a mix of citrus, lime, pineapple, honey and white flowers. The mouthfeel is beautifully elegant and classy, expressing crisp, clean, rich, well-rounded with subtle tannins. Wonderfully refined and balanced. The depth and length is just incredible, it goes on for miles. Drinking gracefully and deliciously today, though it still has many years left ahead. …

Tasted blind and never would have guessed Salon. Surprising amount of residual sugar. Very expressive with stone fruit and some flint on the finish. While very enjoyable it's frankly not worth the current pricing.

At Boston Wine & Poker: Tasted blind. Two of the poker players thought it was a little too sweet, and though I understood their point, I thought they were underrating an insanely delicious bottle of Champagne. This is definitely at the lean, elegant end of the Champagne spectrum -- no biscuity notes -- but is intense and balanced and complete. One of the best Champagnes I have ever had. Many thanks to Karl for this treat.

First bottle of Salon. Unique and transcendent. Like driving a Ferrari. Zippy and fresh. Turbo-charged citrus with minerality. Ready for drinking but no hurry. One of the reference wines I have drunk. Brilliant.
