I think I may have waited too long before opening it. The vibrant and juicy fruit of the Caiño have faded into the background. The minerality is still there as well as raw texture with its savoury notes but the fruit has just lost its sparkle. Still an enjoyable drink but definitely ready to drink now.

Savory flavours dominate the palate, with a nice lean and sappy profile. This freshness makes it ideal for food, though I'd drink now as it's just beginning to loose its definition. Enjoyable still
