A private dinner (Restaurant Rojano's in the Square, Padstow, UK) : Takes its name from the famous magical square: Sator Arepo Tenet Opera Rotas. Very pale, greenish colour, slightly coarse bubble; bright and vibrant, apple and citrus, hint of flowers, light and refreshing, dry enough (RS 10 gr/l) for balance.
