Domaine Pavelot (Jean-Marc et Hugues) Savigny-lès-Beaune 1er Cru Aux Gravains

2 hour decant. Paired with roast duck leg. Still holding its own. While Fruit is still present and pretty well integrated, it Still has that crunchiness Ilike. This will be good to drink for a few more years.

PnP. Drinking beautifully. Right in the zone.

2 hour splash decant. Roast duck/Mushroom risotto for dinner. Very nicely integrated. Still has that chrunchiness I like so much.

1.5 hour splash decant. Mushroom risotto for dinner. (1st time making it, nailed it). Very nice pairing. Blue/black fruits with pronounced floral/perfume notes at the end (violets maybe). Nicely integrated. This drinks nicely now but will last for quite a few more years.

Believe it or not....this still needs two more years. I am drinking it now. Tons of fruit but still too much tannin on the finish. Pavelot wines are for the long haul......which I might not make. I find California universally awful. If I want hard liquor I will order a scotch. They are simply awful.....just had to say it.

Solid. Sadly I only have one more bottle. This was everything you want in a Cotes de Beaune 1er Cru. Really beautiful, and the price was a steal.

2 hour splash decant. Moving to a nice place. medium bodied, soft-ish tannins, blue/black fruits. Went well with a charcuterie plate. Will hold for further for more development.

Similar impressions as the last bottle two years ago. Not sure if it is the warmer vintage, or the vineyard, but I am really enjoying this wine. I should really save my last bottle for some years and move on to my other Pavelot bottles.

Dark, deep and brooding, beautiful aromas- medium body, lots of black cherries, some stems, and dark plum. Nicely balanced and beautiful finish. Really nice.

3 hour splash decant, served with roast duck leg and fried rice (yes fried rice..... with soy sauce). This was very enjoyable. Medium bodied, floral nose and prominent red fruit with very balanced tannins. This is in a nice place now but does need the air to approach. (PnP not recommended) Will be much better in a few years. Highly recommended.

For ung, vent minst 5 år.

Just as my last note, only this bottle seems bit further along. Explosion of powerful saving lés Beune aromas and the palate is irresistibly delicious and quite complex. Super lovely wine.

While still quite young, it delivers a great deal of pleasure. It is complex wine with rich mid palate. Exciting wine to enjoy now and next 20? years.

Two 2015 Pavelots : A lighter colour than the Dominode. A purer, finer, more perfumed nose. The bouquet is still packed full of plenty of ripe fruit, including more red berried fruit, with some earth, spice and underbrush. In the mouth, it's also more accessible than the Dominode. At least at present, the seemingly better balanced and definitely the more attractive wine of the pair. It has serious tannic and acidic structure, fruit concentration and power. Flavours of red and …
