Ayala, Ayala Brut Millesime

I have never been a huge Ayala fan but their Blanc de blancs vintage has been impressive over the years. This shows good ripeness underneath a delicate style- lemon citrus, green apple and chalk with subtle white blossoms on the nose. More leesy complexity with air-time and this should continue to age very well. Some people have commented on the lower acidity in this vintage but this is very good with upside potential. 93+

Clean style, floral and youthful with apple and ripe peach notes. Excellent value!

yellow, light gold, in color. consistent bubble stream. initial aromas of brioche and cream. then proceeding with: pear, peach, lemon juice, tangerine, hazelnut, praline, nutmeg, orange peel, mineral. fine mousse, warm pear pastry, touch of salinity, on a crisp finish. consume: now - 2035

Disgorged November 2021. Initially this seemed reduced to me, with the aromatic signature of it. It seemed to disappear with air, reverting to more of a white flower/honeysuckle. Fruit cup-like flavors of peach and mango, with elevated ripeness, or my perception of the wine seemed like the dosage and or ripeness was giving on a richer tone, kinda candied.

This was soft and a bit flabby, bread dough, brioche, a pleasant bubbly with interesting nose but falls flat on the palate. Bacari w/ gang for tripple header b-day

Atractiva #chardonnay de color dorado con un seductor carácter flora, notas de fruta blanca, toques cítricos, cierta mineralidad y un toque de masa de pan. En boca tiene buen ataque, burbuja pequeñita, notable frescura, tiza y bastante persistencia.

Extremely nice champagne. Balanced on all parameters. Bobbles, dryness, minerals, aftertastes.

Le Tour de Champagne-Perswijn-Amsterdam-11/22-2021: light spicy, fresh and pure, quite tight (quite young) and finishing well.

Light on the palate, very delicate bubbles. Hint of buttery oak.

Champagne : sottilissimo, marino, salsedine, teso. Gran gioco della carbonica che crea la morbidezza di insieme necessaria a bilanciare il vino. Sempre salato ma meno incazzoso ed aggressivo del precedente. Mi piace meno, più giocato sulla delicatezza che sull'incisività.
