Popped and poured. Yeasty strawberry aroma. Bitter lemon mineral flavors. Cherry watermelon finish with a sweet tinge. Great balance, depth, excellent staying power, outstanding QPR. Nice evolving mix of flavors, but still somewhat linear. This is really good, but the whole is (slightly) less than the sum of the parts.

Although technically a Cava, this is not a Cava anymore, but instead a "Spanish quality sparkling wine". A blend of Macabeo (55%), Parellada (20%) and Xarel-lo (20%) with a touch of red Monastrell wine (5%) to give the wine its red color. The name means "by the night". Dosage 4 g/l.
