Hmmm, like last bottle, developing fast. Some nice honeyed lemon lime elements but also a bit of an astringent burnt crisp parmesan thing.. Drink up!

Fairly delicious Chablis. Smells like the following sandwich: salt and lime on honey on green apple on biscuit on slate. Sparkling clarity of flavour. Lots of weight in the mouth but carried by energetic acid, straight as a die.

Pale yellow color. Aromas of salt air, peach pit, lime ice, kerosine and minerals. Clean, medium-bodied fruit in the mouth with excellent balance and depth. Finely detailed with a long, juicy finish.

Lemon-gold. Poached pear, guava, lemon curd (there’s lacticity), a sweet green-vegetal note (almost like sweet pea), and smell like the wind off a dry wheat field (i.e., has a wheaty/mealy/earthy quality). On the palate there’s unctuous fruit, quite viscous and buttery on the palate, soft acidity yet still fresh, and pretty long. This is quite open just now. This seems to reflect 2005 in that it’s quite ripe/oily/sweet and isn’t really tight (or minerally) Chablis, but it is earthy and …

Again, honeyed with some tropical fruit, but better underlying structure and "Chablisness" than the first bottle I noted. Very good, and quite open, as are many '05 Chablis at present.

Yellow tone. Nice complex nose with a whiff of the sea, but on the fat side, even a bit oily in the mouth. Lacking minerality and cut. Not bad but would not seek out. From a bit left over for the second night, I see that I have probably been too harsh here. Tightens and develops more pleasing austerity and earthiness. Now it tastes more like Chablis and less like Chardonnay.
