Domaine Robert Chevillon Nuits St. Georges 1er Cru Les Cailles

A rustic dark fruited NSG. It’s very ‘05, structured and tannic. We opened this an hour ago and let it sit in the glass, but it either needs a decant or a few more years of development

I was disappointed relative to expectations. Stored impeccably since purchase in 1999 and cork was perfect. Quick “thick” in texture, dense, sappy. Decanted 90 minutes and never really opened up. Good fruit and depth but fairly primary and not very elegant. Seems unresolved and young.

Starts quietly but really picks up steam, red and black cherries, smoke, a touch of cocoa. Still plenty of structure (both tannic and acidic), but drinking well. I’m holding rest but no sin to drink now. A-/B+

Of 6 NSGs tasted tonight, I expected this to be WOTN. It was excellent -- perhaps the most complete and well balanced wine -- but no fireworks. Tasting it the next day, it had developed beautifully -- I think it was a rare case where decanting (rather than 1 hour slo-ox) would have been the right thing to do. Another 5-10 years wouldn't hurt either!

Quite different from the previous bottle in 2021. The aroma is still amazing, but with a bit more tertiary aromas this time around. Add to that fresh and rather sour cherries. The total harmonics and general impression is of a wine that's very fresh and vibrant for its age (some would say 'mineral', but I like to avoid that term), and not at all the kind of wine some critics warned that the 2005 would turn out to be.

My first Vaucrains and despite my fear that the 2005 wouldn’t be ready…my biggest issue is it was a bit overrated. Honestly, I’ve enjoyed random Chaignots from off vintages more. It’s ready or it has entered a drinking window with some final tannins indicating it’s just now entering its drinking window. Savory and less fruit than I prefer. It was enjoyable but I expected more.

Gorgeous, with wonderful balance. Soft tannins, with notes of tobacco, cherry and raspberry. Great mouth feel, with a medium long finish.

Deep but not dark colour. Nose of dark fruit. Subtle perhaps a bit too restrained. This then follows through with the taste. The complexity and richness is all there but still very much in check. This could turn out to be great or stay good but muted. Try again in a year or two.

No matter the age of the bottle, I'm always hesitant to open a wine from Robert Chevillon. In my experience, Chevillon's Nuits-Saint-Georges offerings take their sweet time to open up and this was the perfect example of that as this was just beginning to enter its peak drinking window. Brought to drink at Oinoscent during service. No decant, just slowly drank Thick red fruit core, whole spice, there is a raspberry fruit note right in the middle setting the tone. Bright palate, med body, nice balancing acidity, again plenty of red fruit, spicy frame, youthful, long finish. After about 2hr, you get mostly black fruit and the oak gets more upfront with all its spices.

Served a little too cold and too late at night for me to give a proper score, but everyone certainly really enjoyed this. Dark and structured, this held up nicely for our quite heavy meal at Lord's restaurant in NYC.

Big beast of a wine with a lot of dark fruits and structure. Needs a major decant / more time asleep to balance out. Benefitted from a 2 hour splash decant but still was tight and tannic into the finish. I’d suggest trying in 2026. Hopefully the fruit holds up.

From own cellar - Freshness on the nose, menthol, faint scent of pot-pourri upon opening that grows more obvious with extended airing. This has integrated and has shedded tannins. Overall very harmonious with respectable finish. A bit one-dimensional however with a somewhat inscrutable fruit profile which is hard to pin down. One feels an elite 1er Cru NSG in a year like 05 ought to show more. Probably just starting to come out of its shell and deserves another 5+ …

5 or 12 decanted @ 4:00 served @ 8:00 as with prior two bottles. Starts dark and broody, as the evening rolled on this showed more complexity picking up some dark cherry notes and spice. Should improve with another 5-10 years in the cellar

Vertical/Horizontal Tasting of Chevillon Nuits St. Georges Premier Crus (San Francisco) : Deep, even ruby. Powerful blackberry fruit scents. Medium weight. Penetrating blue/black fruit and soil. A little orange peel appears later. Very tannic but not at all harsh. Young, classic Nuits that is easy to appreciate and admire now but should continue to unfold over the next 15 years and turn out to be fabulous. A wine to answer 2005 naysayers. Even better 2 nights later.

A little stinky on opening, but that blew off over the course of a ~2hr decant. Lovely texture, dark fruit. After another 90 minutes, the tannins reasserted themselves. Can certainly be drunk with pleasure now, especially with a decant. Not a great deal of secondary development at this point. I suspect this will be extremely long lived and improve for at least the next decade, if not longer.

4 of 12 opened @ 3:00 served @ 7:30. like the bottle last year, after 4 hours decanting time this was dark, deep and delicious. This has real punch and will continue to improve over the next decade. Had this bottle alongside the 2010 which was more open and giving showing lighter, brighter red fruits with nice balance and finish.

This was very similar to the 08 from the same vineyard and Producer but it had that little bit more concentration, freshness and life to it. Both magical but the 05 was sublime. I think it drinks well now. No need to wait.

Youthful yes but a gorgeous Burgundy nonetheless with dark cherry fruit and flavors of forest floor and char. Structured and grippy but shows plenty on the rich, intense finish with further notes of sweet minerals and spices. 93+

Aerated for an hour but threw it into decanter then for another hour due to tightness Dark, deep core with holiday spice, minerals, and black fruit. Balanced and dynamic palate, with firm ripe acidity and nice punch. Good finish; nice today with some air but upside from here

1 hour of air then into the decanter Intense aromas with dark chocolate, dark red fruit, sauvage, soft mint, and crushed stones and minerals. Intense dynamics in the mouth and yet somewhat weightless and light, great acidity and lift, long, fresh and penetrating; I mightve guessed an 02 Gevrey GC blind. For me in the early strike zone of a long and beautiful window. Very very nice

Wow! This 2005 was absolutely stunning from the get-go. First of all I love Cailles from Chevillon! My first thoughts… Are 2005s coming around? I do not know but this NSG is bad ass. 3 of 12 Decanted @ 4:00 served @ 7:30…. Dark core, deeply fruited nose after two hours in the decanter. Certainly early drinking window with a few hours of air this wine shows beautifully, rich layers of dark cherry fruit, spice, framed by fine tannins and acidity. Beautifully integrated and balanced with a persistent finish. Delicious now clear upside over the next decade

Decanted for 2 hours. Served blind in a flight of 3 red burgundies from 2005. Lafarge Volnay Vendage Selectiones, Chevillon NSG Les Saint Georges and Maume Mazis Chambertin. The Mongeard-Mugneret Echezeaux VV was badly corked. Second favorite wine, this showed red cherry on the nose, tight fairly crisp fruit on the palate with a lot of depth/extraction but not very open. Hard to get a read on when/if this is going to come around.

Cherry and earthy notes, with perhaps a bit of leather as well. Great, pure fruit. Still a decent amount of tannin here, and this should only improve with a few years of cellaring.

2005 Red Burgundy Tasting : PWTG Single Blind Tasting of six wines from the 2005 vintage in Red Burgundy. Decanted for 2 hours before tasting. Wine E My #3, Groups #3 Deep nose, showing earth infused cherry. Full palate, very clenched and firm, with a coarse texture but lots of dry extract. This was very similar wine making to Wine A, so I guessed both as Chevillon's which was correct. When will these 2005s soften?

Very full, fresh, solid and long wine. More solid fruit than minerality, and with a few more hours in the glass the fruity aromas became even more clear with raspberry and rhubarb. A very satisfying wine that will live well for many more years in the cellar, but which is dangerously tempting right now.

The second bottle I opened was even better than the first: more intense and complex, with plenty of fruit to balance. My original comment that this is a good but not great wine was evidently an underassessment, though there might be a slight bottle variation.

Very nice example of a complex, serious Burgundy, fully mature but still lots of sweetish dark berry fruit. Lacks the depth and intensity of a great wine but certainly a very good one. Mid- red, slight browning at edge. Surprising amount of deposit, so decanted.

PnP. First of 6 purchased on release. Cork wet about 1/4 of its length. Tasting notes from 1-3 hours post opening. Dark red for Pinot Noir. Nose of black fruits, iron, mineral spice - very NSG. Ranks among my favorite Chevillon wines, surpassed only by the 2002 Les Saint Georges! Gorgeous garnet color, nose of wood, dark fruits, sexy legs along the sides of the glass. Medium bodied on the palate, the spice and floor of wood provide beautiful structure. And the finish is lengthy. Paired with a roasted pork sandwich, soft VT goat cheese and spicy mustard. Tantalizingly well paired.

Decanted three hours. Baking spice and tart red fruit, and a little bit of graphite. A little hollow on the mid palate. Very nice. Great mid-weight wine, but not a fit for a rich or heavy dish.
