It would appear that an extra 2 months and running the wine through an aerator helped give the wine a little more mouthfeel and less acidity. Nice balance this time and went very well with the grilled dry rubbed salmon.

Drank without food. Slightly darker in color with bitter red cherry on the nose and palate. A little more acidic than I prefer. Hopefully the other two bottles will be better with a little more age.
