Degorgement 2019. Quite accessible and very fresh. Medium acidity. Mature apples dominating right now and nothing classic for Champagne to be found at the moment (Limestone, brioche and sourdough). Needs further cellaring to reach full potential.

Not a single Proy-Goulard wine has made its way into Cellar Tracker until now; and that is a shame, because it deserves wider recognition. Just so happens the wine-maker is our host so maybe we are biased. The Ephemere is the top of their well-priced lineup, a blend of pinot noir and chardonnay, with a low dosage of 4 g. Harvested in 2009. Lovely nutty, bready nose lively bead initially that subsides.
