The nose is what I would define as classic Chablis (in a somewhat modern style): green apples, lemon, chalk, sea, and a whiff of vanilla (only detectable when the wine warms up). Bu à l'aveugle, fait Côte de Beaune au nez avec cet élevage présent, je ne croyais pas avoir affaire à Chablis. Belle densité, ça manque peut-être une pointe d'éclat mais ça demeure délicieux et devrait mieux s'en tirer avec de la nourriture.

2016 var et vanskelig år for mange i Chablis, og det kan tyde på at det vil være lurt å legge litt ekstra i potten for finne viner fra anerkjente vinmarker. Denne fra Vaillons er ikke voldsom intens på nesen, men har åpenbart friske gule frukter og et bra streif av mineraler.
