Coravin fun - Burgundy (My place, Burwood) : From Coravin. The tiniest touch of cellar stink with steely notes, chalky minerality, a little sulphur, unripe nectarine. Peach and honey start to show with time as well as an almost oyster shell salinity. That saline note translates to the palate joined by citrusy freshness, lemon that isn't sharp and a fair amount of cats tongue rasp to the mid palate, Crikey. Demands seafood.

Coravin fun - Chablis + ringin (My place, Kent Street) : From Coravin. Medium minus intensity aromas of lemon, tiny touch of marzipan, mineral, a touch flat, perhaps a smidge of cork taint…not super obvious though. Medium plus intensity acidity, lemon, citrus, textured grip, it feels a little stripped. Drink up

From a 37.5cl. Pronounced aromas of green apple, apple skin, lemon juice, attractive sour cream/cream cheese note, with waxy, straw, macadamia nut development. Bracing acidity which prolongs the compex, gorgeous finish that goes from steel to cream. Excellent wines. Lacks the concentration and depth of a Grand Cru, but this is great Chablis, showing its pedigree with a bit of age. Yum. 13% abv Long temperature-controlled fermentation in stainless steel with indigenous yeasts. Spontaneous malolactic conversion. Matured for 12-16 months …

Pale yellow gold hue. Nose of stony white flowers, chalk, apple core, citrus. Layers of steely grapefruit, granny apple, and flint on the palate. Bracing acidity. Long finish of citrus and apple cut with stone. Excellent combination of austerity and refreshment.

Has some oomph on the palate and is very nice to drink. Herbs, lemon, peach, yellow apple brioche and thyme. A crushed stone dust nose translate to the palate giving a nice texture to this wine.

Yes, JHW425 is exactly right. In my initial tasting, I could find little structure and depth to this wine. It was rather flabby, in effect. One week later and the clear tones are there, all slightly understated but that is to their credit. No wood has been used, so that artificial depth that comes with oak is not here. I bought a mixed case of Louis Michel's wines here in Australia, so I am drinking them in a vertical fashion. …

2017 Louis Michel Chablis (Dig Wines, San Francisco) : More floral and oyster than the basic Chablis. Excellent bright citrus with a good saline vein and bite of minerality. Elegant and stony.

Dinner at MingHin (Chicago, IL) : Next to the Forets, the minerality and backbone in this wine was far more prominent. It had many of the same fruit flavours, but it wasn't as fat and sweet as the Forets. There seemed to be brighter acids here, as well as a much firmer mineral backbone that I really liked.
