Amber colored; Aldehyde on the nose like an aged, medium dry sherry; on the palate a dry richness; interesting in an unusual way but has - in my opinion - not improved. For those that still hold some of those bottles: Drink up !

Quirky! Golden amber color; smoky aroma, sherry like characteristics, aldehyde with a touch of sweetness, saltiness, a followed by some bitter notes. Has turned much drier since tasting it the last time.. A medley of impressions that could drive the innocent, unaware taster berserk...

A unique wine in the sense that it is a dry version of Pedro Ximénez - the variety normally used in making sweet Sherries. The grapes are picked overripe, full three weeks after the normal harvest. The wine is fermented and aged for 6 months in French oak tonels ranging from 225 to 300 liters. The name Fermentación Lenta, "slow fermentation", reflects that the wine is let to ferment fully dry, as opposed to the sweet PX wines. 14% alcohol. …

Voluptuous smell: medium dry Amontillado Sherry like, formaldehyde, acidity and some sweetness thrown in. Unusual medley.. On the palate the theme continues with more sherry impressions; the dryness tempered by a sweetness that must stem at least partially from the extract. Good volume and balance. A most unusual - and interesting - style of wine...

Dorado.

Honey colored wine, smell of Sherry, slightly oxidized. On the palate the wine has a full impact and - even though completely dry - has a touch of sweetness (probably the extract). Voluptuous, mouth filling and long after taste. A peculiar style for sure, but I, and everybody else that tasted it, adored it. Will be interesting to see how it evolves...

100 % Pedro Ximenes. A difficult wine to judge. Floral aromas with honey, sherry and some woody notes. Pronounced Sherry on the palate. Dry, with evident tannins. Impressive. But I am am not sure if I like it. Why put white wine on sherry barrels?

A last-minute tasting at the winery; everything was a bit rushed so the impressions were coming on the fly: Yellow golden color, quite a particular smell; very intense sensation on the palate; completely dry. A bit sherry-like. Interesting and highly unusual.
