Francoise Bedel, Dis Vin Secret

Mid straw. Some development here, quite bready with some toast and a little ginger. A little spikier on the palate, the low dosage not quite having provided the mid-palate rounding that the nose suggests. Decent without being top drawer. ***1/2

The Dis "Vin secret" Brut is an assemblage of 80% Meunier, 10% Pinot Noir and 10% Chardonnay Degorgement June 2020. 4 years on the lees. From the beginning this champagne has a towering structure that at first seems impenetrable. We served this with spare ribs done in a way a chef in Piemont showed me.
